Wholesale and retail egg prices measure different things
A wholesale quote reflects transactions for a specified egg type at a particular market location and time. A retail price reflects what consumers pay at stores. They are related, but they are not interchangeable national price measures: location, egg size and grade, production method, and reporting period all affect comparisons.
USDA’s Economic Research Service (ERS) explains that retailer contracts and pricing strategies can mute short-term wholesale movements. Retailers may also temporarily sell eggs at a loss during wholesale price spikes. As USDA ERS put it in a June 3, 2025 chart note, “As wholesale prices retreat, retail prices are slower to decline and often remain elevated for a longer period.” USDA ERS chart note.
What the latest figures show—and what they do not
The latest wholesale observation identified here is for May 2026, not October spot prices. USDA ERS reported that large eggs in New York averaged 67.85 cents per dozen that month, about 81% below May 2025. In its June 2026 outlook, ERS projected an average wholesale table-egg price of 98 cents per dozen for calendar 2026; that is a forecast, not the final annual average. The latest retail comparison identified here is for August 2026: ERS reported retail egg prices were up 3.5% from July, but 23.0% below August 2025. A one-month increase can coexist with a much lower year-over-year price. The May New York wholesale figure and August retail figures refer to different measures, locations, and periods; they should not be read as a direct same-month comparison. Why egg prices surged and then eased
Highly pathogenic avian influenza (HPAI) reduced the number of laying hens and tightened supplies during the 2024–2025 wave. USDA ERS reported that 50.7 million egg-laying hens were depopulated from mid-October 2024 through early March 2025. With supply constrained as demand approached the winter holidays, wholesale prices rose.

Prices can also fall before every supply problem has disappeared. USDA ERS reported that wholesale prices declined in March and April 2025 as demand eased and new HPAI confirmations paused. Low inventories did not prevent that decline. Subsequent supply recovery helped explain later price drops, while slower retail pass-through meant shoppers did not necessarily see the same timing or size of change at stores. - Size and grade: large eggs are not directly comparable with other sizes or grades.
- Production method: conventional, cage-free, and organic eggs are different products.
- Unit price: calculate the cost per dozen when package sizes differ.
USDA Agricultural Marketing Service (AMS) weekly grocery feature reports compile advertised retail prices from public sources, primarily retailer websites. They can help with market comparisons, but advertised prices may not match every local shelf or the final price a shopper pays. USDA AMS retail reports.
What makes up the price between farms and stores
The shelf price also reflects services and costs across the supply chain. USDA ERS price-spread data compare consumer costs with farmer receipts and describe marketing services provided by processors, wholesalers, retailers, and foodservice providers. When will grocery egg prices come down?
There is no reliable date for a specific store or region in these figures. Wholesale declines can be an early sign of easing costs, but contracts, retailer pricing decisions, local competition, and the type of eggs on offer affect when—and how much—consumers see. The August 2026 retail data show a substantial year-over-year decline alongside a monthly increase, not a guarantee that every shopper’s next grocery trip will be cheaper.
