By February 2025, their business, The Mushroom Guys, was supplying fresh mushrooms to more than 150 restaurants around Western Australia, according to PerthNow’s report by Simon Collins. That figure is a dated snapshot, not a verified current customer count.
How a rental-house project became a food business
The founders started cultivating mushrooms in their Palmyra rental about seven years before Collins’s February 2025 profile. As the venture expanded, Acquado left his final year of engineering studies at Murdoch University to focus on the business. The operation later moved to a dedicated site in Kardinya.
That shift—from a home setup to a production facility—marks the practical change behind the growth story. The Kardinya site was described in the profile as two large factory units, with refrigeration equipment to manage temperature and carbon dioxide.
How The Mushroom Guys grew its crop
The February 2025 profile describes a cultivation process built around substrate and controlled growing conditions: spores are inoculated into plastic bags filled with jarrah or blue gum sawdust and lupin hulls, then left to grow in fridges.

At the time of that report, the business grew 17 edible varieties, including shiitake, lion’s mane and pink oyster mushrooms, as well as four non-edible varieties for medicinal supplements. Those counts describe the operation as reported in 2025; they should not be taken as a current catalogue.
Restaurant demand shaped the work—and the schedule
Acquado told PerthNow that the farm ran year-round, with daily harvesting and deliveries every day except Sunday. He described the work plainly: “The farm is a grind, to be honest. We run 365 days a year, literally no days off.”

He also credited relationships with chefs as a source of motivation: “The thing that keeps me going is not the mushrooms, it’s dealing with chefs,” and “I love the chefs. They’re super enthusiastic.” Orders often arrived overnight for fresh produce the next day, according to the profile. Acquado said more than 80 per cent of produce went to restaurants, while the rest was sold to the public at farmers markets. Both the sales mix and delivery rhythm are details reported in February 2025, not confirmed current figures.
His account suggests that repeat restaurant business depended on more than growing a distinctive crop: chefs needed fresh supply that could respond to their orders. “Like with any industry, as long as you try your hardest and make the best product, people respond,” he said. “I’ve never once met an angry chef. If they’re getting good produce, they’re happy and you’re happy.”

What restaurant buyers can confirm today
The Mushroom Guys’ wholesale page currently describes supply for restaurants, caterers, specialty venues and other businesses in metropolitan Perth. The company states that free delivery is available for restaurants, catering companies and specialty venues in the Perth metropolitan area, with a 2 kg minimum; eligibility is for businesses and ABN holders. These are company-published terms, so prospective buyers should confirm current availability, delivery arrangements and minimums directly with the business.
Grow blocks offer a route for home growers
During the pandemic period, when restaurant closures disrupted demand, Novak built a website for online mushroom sales and grow kits, the PerthNow profile reported. The company currently lists mushroom grow blocks, which it describes as drawn from the same crop lines used for restaurant supply. That is a consumer option for people interested in growing mushrooms at home; the cited company page does not establish delivery coverage or current pricing.
