There is no defensible single “best” oyster knife for every shucker: blade pattern, tip shape, handle grip and oyster size all affect which design is easiest to control. Match the blade pattern to the job
Oyster knives are not interchangeable. Blade length and width, tip shape and the leverage they offer vary by pattern. A curved or bent tip is one common design; Boston-style knives typically have a straight blade, while other patterns use shorter, wider blades. Choose based on the oysters you handle and the control you need, rather than assuming one shape suits every shell.
Prioritize a secure handle
Shucking involves pressure close to a hard shell, so a handle that feels secure in a wet hand is an important selection factor. OXO describes its handle as soft and non-slip; Dexter-Russell describes the Sani-Safe handle on its S121 as textured. These are manufacturer descriptions, not a controlled comparison of grip performance.
Factor in experience and oyster size
HowToEatOyster’s March 9, 2026 guide recommends OXO as beginner-friendly and the narrower R. Murphy Wellfleet for smaller oysters. Those are that publisher’s recommendations, not universal findings. A comfortable, controllable handle may matter more to a newer shucker than choosing a specialized blade pattern.

Use a hand-protection precaution
HowToEatOyster recommends a cut-resistant glove. A glove can be an added precaution while handling a knife and shell, but it is not a guarantee against injury. Work carefully and keep your supporting hand out of the knife’s path.

The recommendations come from published material, not testing conducted for this article. HowToEatOyster’s roundup, dated March 9, 2026, says its author tested several knives and presents first-person recommendations. Dexter 1818 republishes Serious Eats material attributed to Grace Kelly that describes testing; the original Serious Eats article was not directly reviewed for this comparison. WebstaurantStore says it curated choices using criteria, but the reviewed material does not provide a controlled test protocol.
