Six Pro Bakers Recommend the Same Vanilla Extract—Here’s What to Know

Six food and baking professionals interviewed by Simply Recipes named Nielsen-Massey Pure Vanilla Extract as their shared top choice—but it was an editorial recommendation, not a controlled taste test.

In a September 2, 2024 Simply Recipes article, all six interviewed baking and food professionals named Nielsen-Massey Pure Vanilla Extract as their shared top choice. That makes it a useful recommendation to consider—not proof that every professional baker prefers it or that it won a controlled taste test.

Which vanilla extract did the six bakers recommend?

The six professionals interviewed by Simply Recipes recommended Nielsen-Massey Pure Vanilla Extract. The panel included recipe developer and author Erin Jeanne McDowell, pastry and baking instructor Penny Stankiewicz, pastry chefs Mandy Groom and Nicole Redd-McIntosh, food blogger and photographer Jonathan Melendez, and food writer and cookbook author Irvin Lin. The article was syndicated by AOL on September 2, 2024 (AOL’s version of the article).

Their reasons were practical and sensory: they described the extract as having depth and complexity, consistent quality, and a flavor that works especially well when vanilla is prominent. Those are the panelists’ opinions, not results from a blind or standardized comparison. Six interviewees are a small editorial panel, not a measure of what professional bakers as a whole prefer.

When does that recommendation matter most?

Consider the recipe. The panel’s strongest case for Nielsen-Massey is when vanilla is a leading flavor rather than a background note. Lin said he reaches for it in recipes such as vanilla custard, crème brûlée, ice cream, pudding, and buttercream frosting. Melendez described using it across desserts, breakfast treats, and drinks.

Stankiewicz said, “Less can be used to achieve the nuanced vanilla flavor.” That is her assessment, not a tested conversion rule: follow the quantity in your recipe rather than assuming you can reduce the amount of any extract.

Should you buy extract or vanilla bean paste?

Vanilla bean paste is a separate product, not simply another name for extract. The article describes it as an option for concentrated vanilla flavor and visible seeds. McDowell, Redd-McIntosh, and Lin were also fans of Nielsen-Massey’s paste.

Choose paste when the seeds’ appearance suits the finished dish and the recipe supports using paste. If you want an ingredient specifically identified as extract, or your recipe calls for extract, use extract. The panel article does not establish a universal one-for-one substitution ratio.

What if you want a different brand or a lower-cost option?

The article also mentions McCormick, Watkins, and Costco’s Kirkland Signature among panelists’ preferences or picks. These mentions are not a common head-to-head ranking, so they do not show that one is better or cheaper than another. Check the label for the product type you want, and compare current bottle size and price if cost per use matters to you; the article does not provide current prices or establish savings.

For frequent bakers, a larger bottle may be convenient, but buying in bulk only makes sense if you expect to use it. McDowell said she stocks multiple brands and uses Nielsen-Massey frequently, a reminder that a recommendation need not mean using one brand for every recipe.
