The airline had begun introducing dishes when the update was reported on September 29, 2026; remaining dining enhancements were planned from November. The timing is progressive, so a listed dish is not guaranteed on every flight.
What is new on Singapore Airlines flights?
SIA Chefs’ Selection brings together dishes developed by the airline’s in-house and guest chefs with its catering partners. Examples reported by CNA on September 29, 2026 include:
- Suites and First Class: Poached Maine Lobster with Champagne Sauce and Beef Short Rib Sambal Percik with Nasi Kerabu.
- Business Class: Singapore Style Prawn Noodle Soup.
- Premium Economy: Irish Lamb Stew and Chicken Stroganoff.
- Economy: roasted chicken breast or oriental-style fish.
These are examples from the announcement, not a complete flight-by-flight menu. Choices can vary by route, cabin and departure.
What else is changing in the dining experience?
Beverages and premium-cabin serviceware
The update includes refreshed beverages and custom-designed serviceware for premium cabins, made with French tableware brand Christofle. Singapore Airlines described it as the first airline introduction of Christofle chinaware onboard. That collaboration concerns onboard serviceware; the announcement does not establish that the custom pieces are sold to consumers.

How this fits with earlier menu updates
SIA Chefs’ Selection is distinct from earlier dining initiatives. Singapore Airlines’ FY2025/26 annual report says selected-route guest-chef menus feature regional dishes and seasonal ingredients. It records refreshed Shahi Thali and Ruchi Thali menus created with Chef Sanjeev Kapoor for Singapore–India services in May 2025, First and Business Class bread changes in February 2026, flavoured soft rolls in Economy from June 2026, and a streamlined Book the Cook selection organized into Asian, Singaporean, Wellness and Western categories from July 2025.
How to see your flight’s menu or pre-select a meal
Singapore Airlines says travelers can preview their flight’s menu digitally up to six weeks before departure. For eligible confirmed bookings, main-course pre-selection is also available for meal services. The airline says in-flight and Book the Cook pre-orders can be made through Manage Booking up to six weeks before departure.

- Open Singapore Airlines’ in-flight dining page and follow the link to Manage Booking.
- Sign in to the confirmed booking and check the digital menu for the flight’s food, beverages, amenities and snacks.
- If the booking is in Suites and First Class, Business Class or Premium Economy, review the available main-course pre-selection and Book the Cook options for that flight.
Menu previews and choices depend on the specific flight and booking. Check the booking rather than assuming a dish named in the rollout announcement will be available on your departure.

CNA reported on September 29, 2026 that Singapore Airlines had begun introducing dishes and planned remaining dining enhancements from November 2026. That is an announced rollout schedule, not confirmation that all changes are already live on every route. The airline’s senior vice president of customer experience, Yeoh Phee Teik, said the review covered menu design, seasonal ingredients, cooking techniques, beverages, presentation and cabin-crew service, guided by customer feedback and dining trends.

The headline claim that “everyone is talking about” the menu is not substantiated by the available reporting; it is best read as promotional wording, not evidence of measured popularity. SilverKris reported in 2026 that Singapore Airlines serves over 50,000 meals on board daily, attributed to its Food & Beverage Director Chef Damien Le Bihan, who said the food is designed to perform consistently at altitude.
