Q&A: Liz Garst on Soil Health, Family Farming, and the Garst Seed Legacy

Liz Garst’s 2020 account connects the Garst family’s soil-health practices and Coon Rapids history with the hybrid-corn business and Whiterock Conservancy.

In a July 2020 interview, Liz Garst described her family’s decades of no-till farming, its gradual adoption of cover crops, and the cost-sharing approach they used with tenants. Her account also links the Garst family’s Coon Rapids farm to the hybrid-corn business that helped spread hybrid seed in the Midwest and to Whiterock Conservancy, a nonprofit land trust created to protect family land and make it available to the public.

Who is Liz Garst?

Liz Garst is part of a multigenerational farming family based in Coon Rapids, Iowa, and the granddaughter of Roswell Garst. In Successful Farming’s July 2020 Q&A, she was described as the Garst family business manager and a soil-health advocate. The interview reported that she earned a bachelor’s degree from Stanford, a master’s in agricultural economics from Michigan State University, and an MBA from Harvard Business School. Those are descriptions and credentials as reported in 2020, not a confirmation of her current job title.

An Environmental Law & Policy Center biography has also described Garst as a commercial farm manager, director of family-owned banks, former World Bank staffer, former Garst Seed Company business manager, oral historian, and conservancy board member. What was Garst Seed Company?

The family’s seed-business story is rooted in the early growth of hybrid corn. Iowa State University’s finding aid says Roswell and Elizabeth Garst returned to Coon Rapids in 1930 to grow Henry A. Wallace’s hybrid corn strain for seed sales. In winter 1930–31, they formed the Garst and Thomas Hybrid Corn Company with Charlie and Bertha Thomas. The archive credits the company with helping spread hybrid seed across the Midwest. Iowa State’s finding aid for the Garst papers documents the collection and its historical context.

In figures attributed to Liz Garst at a public lecture and reported by Harvest Public Media in 2016, hybrid seed accounted for 0.5% of Midwest corn in 1929 and 100% in 1940. These are reported historical figures, not a dataset independently established here. Harvest Public Media also reported that Syngenta bought the Garst brand in 2004 and retired the name in 2014; that history concerns the commercial brand and does not describe the present status of every Garst family business. Why is the Garst family associated with Khrushchev’s 1959 visit?

Roswell Garst hosted Soviet leader Nikita Khrushchev at Coon Rapids on September 23, 1959, amid U.S.–Soviet agricultural exchanges. The National Endowment for the Humanities describes how a Soviet delegation visited the Garst farm and seed company, after which Roswell was asked to visit the Soviet Union. Liz recalled being eight years old when Khrushchev came. She remembered a friend’s father joking that “everyone I saw around Coon Rapids wearing a tie who I didn’t know was a spy.”

In the same account, Liz remembered her grandfather as someone who “thought he could do anything he wanted” and said he “made the world very interesting.” These are her recollections, not a neutral assessment of his character. What soil-health practices did Liz Garst describe?

In the 2020 interview, Garst said the family’s farms had been 100% no-till since the 1970s. She said they began experimenting with cover crops about 15 years before the interview and had expanded them across their operation for several years by then. She also described investing early farm profits in terraces to protect soil. These are her account of the family’s practices at that time, not an independent assessment of their current operation or the results on other farms.

For landowners and tenants considering cover crops, her example is useful chiefly as a description of how one family approached adoption and establishment costs:

  1. Start with a trial. Garst said the family tested cover crops on part of a farm rather than asking a tenant to change the whole operation at once.
  2. Share more of the early cost. In the family’s arrangement, the landlord paid 90% of cover-crop costs in the first year, then 80% and 70% in successive stages.
  3. Move toward an even split. The arrangement eventually reached a 50-50 division between landlord and tenant.
  4. Allow time for benefits to appear. Garst said the family believed both parties benefited, while acknowledging that soil-structure changes—and the tenant’s share of benefits—could take a couple of years to show.

This was a reported family approach, not a universal cost-sharing formula or an independently evaluated agronomic recommendation. The interview does not supply a detailed contract template or break down how the arrangement might differ for cash rent, sharecropping, or custom farming; those terms and the parties’ expectations would need to be worked out for each farm.

Garst also cited soil-loss estimates and projections she attributed to Dr. Hatfield, formerly with USDA’s Agricultural Research Service in Iowa. In 2020, she said Iowa had lost a little more than half of its topsoil, half the carbon in its remaining soil, and almost 50% of its inherent nitrogen or fertility. She also relayed projections of losing remaining topsoil in 80–100 years in Iowa’s prairie pothole region and about 35 years in the Loess Hills. These are second-hand estimates and projections as Garst presented them in 2020; they should not be treated as current official USDA estimates.

What is Whiterock Conservancy?

Whiterock Conservancy is a nonprofit land trust outside Coon Rapids associated with the Garst family and the Iowa Natural Heritage Foundation. Garst and her sisters worked with the foundation to create the conservancy and donate family land for public enjoyment. The 2020 interview described a combined purpose: protect natural resources, demonstrate sustainable agriculture, and provide public access.

The interview said the family had donated more than 4,000 acres toward a planned 5,500-acre gift. A separate 2019 Iowa Natural Heritage Foundation feature described Whiterock as nearly 5,500 acres, with 4,200 contiguous acres open to the public, and said the nonprofit in its current form was created in 2004 by the five Garst sisters and their mother. Those are figures with different scopes and dates, so they should not be read as interchangeable acreage counts. The foundation describes a landscape of prairie, wetland seeps, oak savanna, rocky bluffs, working agricultural land, and eight miles of the Middle Raccoon River. The 2020 interview described restoration of oak savanna, wetlands, and dry sand prairie, alongside working-land practices including no-till, terraces, cover crops, prairie strips, and rotational grazing. It also reported about 40 miles of trails and overnight accommodations. These are interview-era descriptions; visitors should check the conservancy’s own information for current access and facilities. Garst said of the land, “Everyone in the family has really loved this land that is now Whiterock,” and, “This is meant to be public.”
