U.S. egg prices are much lower than a year ago, but they have not fallen steadily. In August 2026, farm-level prices were 59.4% below August 2025 even after rising 49.1% from July; retail egg prices also edged up 3.5% from July to August. Those figures describe different points in the supply chain, and neither guarantees what eggs cost at a particular store.
Are egg prices really down, or did they just rise again?
Both statements can be true because they use different comparison periods and price measures. USDA’s September 25, 2026 Food Price Outlook summary, based on August data, reported that farm-level egg prices rose 49.1% from July but remained 59.4% below August 2025. Retail egg prices rose 3.5% from July to August.
A year-over-year decline compares a month with the same month a year earlier; a month-over-month increase compares it with the immediately preceding month. A price can therefore remain far below last year while increasing recently. Also, farm-level, wholesale, and retail figures are not interchangeable: they refer to different stages of the market.
Why did egg prices fall so sharply from their highs?
The main explanation is recovering supply after a period when highly pathogenic avian influenza (HPAI) affected egg-laying flocks and reduced production. USDA Economic Research Service (ERS) attributes the large annual swings in farm-level egg prices primarily to HPAI and the resulting production reductions. The pattern reflects a supply shock interacting with changing seasonal demand, not evidence of a permanent new price level or a single cause acting alone.

USDA’s September 18, 2026 poultry and egg outlook adjusted projected 2026 table-egg production higher as the domestic laying flock rebuilt. It also raised its projection for exports, reflecting flock rebuilding and healthy international demand, and lowered its projected average egg price for the third quarter based on recent prices. This supports the conclusion that supply is recovering; it is not a guarantee of continued declines.
What the reported prices actually measure
Price comparisons make sense only when the market stage, geography, date, and comparison period are clear. These USDA figures illustrate why.

The May retail and wholesale numbers differ in both market stage and geography. They should not be compared as though they were competing prices for the same transaction. The average retail figure also cannot tell a shopper the price of a particular size, brand, or package at a local store.
Why can grocery prices lag wholesale prices?
Wholesale egg prices respond more quickly to supply, seasonal demand, and supply-chain disruptions. ERS explains that retailers’ pricing strategies and contracts can dampen or delay the effect of wholesale movements at the shelf. As a result, a wholesale benchmark may fall sharply before shoppers see the same direction or magnitude of change in local retail prices. Retail prices can also vary by location and seller.

How volatile have egg prices been?
USDA ERS’s annual changes are for farm-level egg prices, not retail prices:

The alternating rises and falls help explain why one year’s steep decline does not by itself establish a stable long-term trend. ERS links those swings primarily to HPAI and lower egg production.

What could change prices from here?
The September 2026 USDA outlook points to higher projected production as the laying flock rebuilds and a lower third-quarter average-price projection based on recent prices. Those are forecasts, not promises. Disease conditions, output, demand, and seasonal patterns can all affect prices, and a national monthly average may not track a particular store’s shelf price.
When evaluating a headline or comparing prices, check whether the figures refer to farm, wholesale, or retail prices; identify the month and year; distinguish month-over-month from year-over-year changes; and note the geography and whether the number is an average or a specific store price.
