The sources available do not establish when it moved or whether it still has a presence at the State Buildings.
What happened at the State Buildings?
PerthNow reported on 9 December 2021 that Chef’s Edge would open a physical shop at Perth’s State Buildings that Saturday. The business had operated online before the planned opening. Co-owner Ben Stieger recalled that they had started online “about three-and-a-half years ago,” describing it as a small project and creative outlet for the founders. That timing is his recollection as reported in 2021, not a separately measured business statistic.
The move brought an online retailer into a physical location where customers could see knives before buying. Co-owner Sam Haigh said, “Our audience really wanted to see before they purchase.” He described the difficulty of asking a distant customer to make a substantial purchase without handling the product: “That’s a big investment we’re asking someone to make 15,000km away without being able to hold something,” Mr Haigh said. PerthNow also reported orders to customers in the Maldives and United Arab Emirates and to a pastry chef in Dubai; those are historical details, not a statement of current shipping availability. PerthNow’s 9 December 2021 report covered the opening.
Who founded Chef’s Edge, and what was its focus?
Chef’s Edge was founded by Perth entrepreneurs Ben Stieger and Sam Haigh. Stieger said the founders wanted to serve customers ranging from kitchen beginners to culinary experts, with traditional Japanese craft at the centre of the business. “The main drive of the business is the traditional Japanese crafts,” he said.

Stieger also said the business sought to support makers directly: “It’s really good to be able to support that directly. Their family history of making edged tools dates back about 400-500 years.” This was his description of some makers’ family histories, not a verified claim about every maker or supplier.
In the 2021 report, Stieger called Chef’s Edge a niche business and said there were no other Perth retailers doing the same thing. That statement reflects the co-owner’s view at the time, rather than a current survey of retailers.

Where is Chef’s Edge now?
The retailer’s official contact page currently lists 4/150 Oxford Street, Leederville WA 6007. It also lists knife sales and professional whetstone sharpening. The reviewed sources do not say when the address changed, or confirm whether a State Buildings shop remains open. Check the official contact page for the latest address and service details before visiting; listed services and prices can change.
What does Chef’s Edge sell?
The current official range includes Japanese kitchen knives as well as sharpening gear, whetstones, knife storage, ceramics and other kitchen goods. The retailer describes the gyuto as an all-purpose chef knife. Its FAQ says knives are made in Japan by the maker named on each product page, while also noting that it stocks makers in other countries. In other words, Japanese-made knives are central to the offering, but not every item or maker in the broader selection should be assumed to be Japanese.

For people maintaining a knife at home, the retailer’s FAQ recommends a 1000/3000-grit combination stone as a starting point for most home cooks.
