The venue pairs elevated, table-service dining with beer and spirits made in-house. PerthNow’s February 5, 2024 photo report captures selected guests at an exclusive evening, though its accessible text does not state when the event took place.
What opened in Burswood
The Gastrobrewery occupies a converted red-brick warehouse at 102 Goodwood Parade, Burswood WA 6100. Trade coverage described its opening as the last step in the Blasta Collective’s rollout. Blasta’s wider precinct also includes a beer hall and alfresco area connected to the Gastrobrewery by a laneway.
Blasta describes the two-venue collective as spanning more than 4,200 square metres. That is the company’s stated footprint, not an independently measured figure. The venue’s dining spaces include multiple zones, a private dining greenhouse and a chef’s table.
Food, drink and the dining concept
Blasta presents the Gastrobrewery as a more refined dining experience than a conventional brewpub, with table service, seasonal local produce and an elevated menu. Beer, whisky and gin are made in-house. Founder and managing director Steven Russell described the service and food as central to the concept: “Incredible table service is a big part of that along with a higher standard of dishes on offer.”

Jay Tesorero named executive chef
PerthNow reported that award-winning chef Jay Tesorero joined as executive chef, bringing modern Australian and British dishes for lunch and dinner. The report said he had cooked for international performers including ABBA and the Red Hot Chili Peppers.
Examples from the published menu
The published menu included beef Wellington, duck breast, Parisian gnocchi and salmon, alongside options such as a five-beer tasting paddle and drinks made with Blasta gin. These are examples from that menu, not a guarantee of current availability; menus can change. Blasta advises guests with an allergy, intolerance or sensitivity to speak with a server about ingredients.

In a February 1, 2024 report, Brews News quoted Russell describing the project as the result of “over three years” of site identification, planning, regulatory approvals, design, fitout and launch. Russell also said, “It’s safe to say we are very excited to be at this point and to have our vision come to life.”
