Bill Gates-Backed Savor Makes Butter From Carbon Inputs—But What About Milk?

Savor announced carbon-derived, animal- and plant-free butter as its first product in 2025. Milk was reported as a development goal, not a launched product.

Savor, a food-technology startup backed by Bill Gates, announced an animal- and plant-free butter as its first product in March 2025. The company describes making fats from carbon dioxide and other inputs rather than raising animals or growing oil crops. Milk was reported as an area of development, but the sources available do not establish that Savor has launched a milk product.

What Savor has actually announced

Savor was founded in 2022 and is backed by Breakthrough Energy Ventures and Synthesis Capital, according to the company’s March 20, 2025 launch announcement. That announcement identified butter—not milk—as its first product.

A July 2024 report said Savor was exploring dairy-free alternatives to ice cream, cheese, and milk. That describes a development direction, not proof that those products are on sale. The sources available do not show a launched Savor milk product.

How carbon inputs become fat

In a February 2024 account, Gates described Savor’s process as using carbon dioxide from the air and hydrogen from water, then applying heat and chemical conversion to produce fatty acids and fats. Savor’s 2025 announcement described its fats as built from point-captured carbon dioxide, green hydrogen, and methane.

In plain terms, the company aims to assemble fats from carbon-containing inputs rather than obtain them from animal milk or plant oils. Savor says it can adjust fatty-acid profiles and produce fats and oils beyond its initial butter formulation. The published descriptions do not provide a full process specification or an independent engineering assessment, so the details should be understood as company and investor descriptions rather than independently verified process findings.

Launch, safety claim, and production plans

Savor announced a commercial launch of its butter on March 20, 2025, and said select restaurants and bakeries—including SingleThread, ONE65, and Jane the Bakery—were expected to be among early customers that year. The announcement is evidence of a launch plan, not confirmation of current availability at those businesses or broad retail distribution.

Savor also said it had achieved a self-affirmed Generally Recognized As Safe (GRAS) designation, which the company said allowed legal sales in the United States. That statement is attributable to Savor; the sources cited here do not independently assess the safety basis or establish regulatory status outside the US.

The company announced a 25,000-square-foot pilot production facility in Batavia, Illinois, with initial capacity to produce metric tons of fat starting in 2025. This was a dated plan in the launch announcement. It does not establish the facility’s current output, utilization, or present-day consumer access.

What the taste and climate claims do—and don’t—show

Taste evidence

In July 2024, Savor CEO Kathleen Alexander said the company had conducted informal panels with tens of people: “So far, we had informal taste panels with tens of people.” She also expected a more formal panel as commercialization and scale-up progressed, according to The Guardian’s July 16, 2024 report.

Gates separately wrote that he had tasted Savor’s products and “I couldn’t believe I wasn’t eating real butter.” That is an investor’s personal reaction, not a controlled sensory-trial result. The reporting cited here does not establish the outcome of a formal taste study.

Footprint estimate

The Guardian reported Savor’s prospective estimate of less than 0.8 grams of carbon-dioxide equivalent per calorie for its butter. For comparison, the report gave approximately 2.4 grams of carbon-dioxide equivalent per calorie for standard unsalted butter with 80% fat. The article amended its report to clarify the per-calorie unit.

The Savor figure is a company estimate, not an independently verified lifecycle result. The sources cited here do not establish that the figures come from a like-for-like independent analysis, so they should not be read as proof that Savor butter has a particular measured climate advantage in commercial production. Gates also claimed the process releases no greenhouse gases and uses less than one-thousandth of the water of traditional agriculture; that comparison is his claim, not an independently validated result in the cited material.

Why Savor is pursuing food-industry partnerships

Savor’s stated opportunity extends beyond selling butter directly to consumers. The company said multinational consumer packaged goods companies were working with it on ingredient innovation and that it was negotiating joint development agreements. Those statements point to a business-to-business ingredient strategy, not proof that a broad range of Savor-made products is already on the market.

For food companies, customizable fats could be useful if they can meet product requirements for flavor, texture, cost, safety, and reliable supply. The announcements establish Savor’s ambition and reported discussions; they do not establish the commercial performance or scale of those potential partnerships.
