The 6 Best Oyster Knives: How to Choose the Right Blade and Handle

Compare six oyster knives by blade pattern, handle grip and intended use, with clear attribution for published recommendations and manufacturer specifications.

There is no defensible single “best” oyster knife for every shucker: blade pattern, tip shape, handle grip and oyster size all affect which design is easiest to control. The six models below are a useful shortlist, not six knives independently tested for this article. Published recommendations are attributed to their sources, and manufacturer specifications are separated from reviewers’ judgments.

How to choose an oyster knife

Match the blade pattern to the job

Oyster knives are not interchangeable. Blade length and width, tip shape and the leverage they offer vary by pattern. A curved or bent tip is one common design; Boston-style knives typically have a straight blade, while other patterns use shorter, wider blades. Choose based on the oysters you handle and the control you need, rather than assuming one shape suits every shell.

Prioritize a secure handle

Shucking involves pressure close to a hard shell, so a handle that feels secure in a wet hand is an important selection factor. OXO describes its handle as soft and non-slip; Dexter-Russell describes the Sani-Safe handle on its S121 as textured. These are manufacturer descriptions, not a controlled comparison of grip performance.

Factor in experience and oyster size

HowToEatOyster’s March 9, 2026 guide recommends OXO as beginner-friendly and the narrower R. Murphy Wellfleet for smaller oysters. Those are that publisher’s recommendations, not universal findings. A comfortable, controllable handle may matter more to a newer shucker than choosing a specialized blade pattern.

Use a hand-protection precaution

HowToEatOyster recommends a cut-resistant glove. A glove can be an added precaution while handling a knife and shell, but it is not a guarantee against injury. Work carefully and keep your supporting hand out of the knife’s path.

Dexter-Russell New Haven, S121 / 10473 Dexter-Russell specifies a curved New Haven tip, high-carbon stainless DEXSTEEL blade and textured Sani-Safe handle. Confirm the exact model code and handle version before buying. HowToEatOyster names a Dexter-Russell New Haven as its budget pick. That recommendation does not establish a current price or that every listing is the same version.
OXO Good Grips Oyster Knife, SKU 35681 OXO specifies a bent stainless-steel blade tip, ergonomic soft non-slip handle and dishwasher-safe construction. Its product page displayed $14.99 when accessed; the price may change. HowToEatOyster recommends it for beginners. OXO’s specifications describe the product, not comparative test results.
Toadfish Professional Oyster Knife HowToEatOyster includes it as a design pick. The reviewed material does not establish manufacturer specifications for this comparison. A design option in that roundup; check the maker’s current product details before choosing it for a specific feature.
R. Murphy Wellfleet Oyster Knife HowToEatOyster describes a narrower, pointed blade. That roundup recommends it for smaller oysters. Treat the fit as the publisher’s judgment, not a guarantee for every small oyster or shucker.
Victorinox Oyster Knife 7.6394 Victorinox lists a bent blade, slip-resistant polypropylene handle, 6.5-inch overall length, 2.9-ounce weight, dishwasher-safe construction and Portugal origin. It states lifetime warranty coverage. A manufacturer-documented alternative; the specifications do not by themselves establish that it outperforms other models.

Other blade patterns you may see

WebstaurantStore’s retailer comparison describes several additional models: Dexter-Russell 10483 has a short, wide, rounded blade; Victorinox 7.6399.6 is a Boston-style straight blade with a rounded tip; Dexter-Russell 10493 is a longer, narrow Boston-style blade; and Victorinox 7.6399.8 is a straight-edge model. These are retailer descriptions and editorial assessments, not controlled comparative test results. Check model numbers carefully: Victorinox 7.6394, listed above, is a different model from 7.6399.6 and 7.6399.8.

What “tested and reviewed” means here

The recommendations come from published material, not testing conducted for this article. HowToEatOyster’s roundup, dated March 9, 2026, says its author tested several knives and presents first-person recommendations. Dexter 1818 republishes Serious Eats material attributed to Grace Kelly that describes testing; the original Serious Eats article was not directly reviewed for this comparison. WebstaurantStore says it curated choices using criteria, but the reviewed material does not provide a controlled test protocol. Accordingly, the picks above are attributed recommendations, not a new six-knife test or a verified overall ranking.
