Kura Sushi’s U.S. expansion shows that conveyor-belt dining can grow as a technology-enabled, entertainment-led restaurant format—but growth is not proof that the model is broadly profitable or destined to dominate. In its fiscal third quarter ended May 31, 2026, Kura Sushi USA reported $85.9 million in sales and opened seven restaurants, while comparable restaurant sales slipped 0.4%. Its experience combines a revolving sushi belt with made-to-order delivery, table ordering, plate tracking and rewards. The results point to a format worth watching, with the caveat that new locations, uneven same-store performance and rising food costs tell different parts of the story.
What Kura Sushi’s latest growth figures actually show
Kura Sushi USA’s fiscal third-quarter release, published July 7, 2026, reported $85.9 million in sales for the quarter ended May 31, 2026. Comparable restaurant sales declined 0.4%, even as the company opened seven new U.S. restaurants. Total sales reflect both the established restaurant base and newer locations; the comparable-sales figure offers a separate, though still limited, view of demand at restaurants included in that measure. Management reaffirmed its FY2026 plan for 16 new restaurants, annual unit growth above 20%, and average net capital expenditures of about $2.5 million per unit. Those are forward-looking company targets, not completed openings or guaranteed returns. They indicate a willingness to keep investing, but do not establish how quickly each location will mature or earn back its opening cost.
The company reported restaurant-level operating profit of $16.4 million, or 19.1% of sales, for Q3. It identifies this as a non-GAAP measure: it is not the same as net income under generally accepted accounting principles, and should not be read as the profitability of the company as a whole.

How Kura’s conveyor system works as a restaurant experience
The conveyor is one part of a service system rather than the entire operating model. Kura describes a dual-layer setup: a revolving belt carries dishes past diners, while a separate express lane delivers made-to-order items. Food movement, ordering and plate tracking
Kura says its Mr. Fresh dome limits airborne exposure around dishes on the revolving belt. The company also describes plate tracking, with Bikkura Pon counting plates for billing and offering guests rewards after every 15 plates. These features make the meal legible and interactive: diners can see food circulating, order items directly, and connect the plates they consume with the bill and reward mechanism.

Technology beyond the belt
Kura’s account also describes drink-delivery robots, an AI-supported waitlist, a rewards app, DoorDash delivery, and QR plate scanning intended to create real-time consumption analytics and support demand forecasting. These are company descriptions of capabilities and intended uses. They do not, on their own, show how much labor is saved, whether forecasting improves, or whether guests return more often as a result.
Why the format could be useful to other restaurants
The transferable idea is not simply “put food on a conveyor.” Kura’s example joins visible food selection and entertainment with made-to-order service and information tools. That combination could suit restaurants that need to handle varied demand while making the ordering experience itself part of the appeal. The belt gives diners a changing selection to browse; an express lane and table ordering allow items outside that circulating selection to reach the table without requiring the belt to carry every possible dish.

There are practical questions any operator considering a similar format would need to answer:
- Expansion versus established-store demand: New openings can lift total sales, but comparable-store results help show whether existing locations are also holding customer demand.
- Investment versus returns: Build-out capital, restaurant-level margin and company-level operating profit measure different aspects of the economics. A restaurant-level non-GAAP figure does not resolve whether expansion earns an adequate overall return.
- Service design: A format must make clear what circulates, what can be ordered, how orders arrive and how diners are billed.
- Technology versus labor outcomes: Apps, robots and tracking may support service, but their presence is not evidence that labor costs fall or service improves.
- Food costs and pricing: Imported-input exposure, menu prices, traffic and price/mix all affect whether sales translate into profit.
- Entertainment versus loyalty: Rewards and collaborations can add playfulness, but they do not prove repeat visits without retention data.
These are useful comparison criteria, not evidence that Kura leads the category. The available company disclosures do not provide equivalent current peer data for a like-for-like ranking.

Growth, same-store sales and profit have not moved in lockstep
Kura Sushi USA’s recent results illustrate why the expansion story should not be reduced to one headline. In FY2025, the company said sales were affected by a volatile consumer environment and tariff pressures. It reported $52.1 million in restaurant-level operating profit, or 18.4% of sales, and adjusted EBITDA of $19.1 million; both measures are company-reported, and restaurant-level operating profit is non-GAAP. At August 31, 2025, it had 82 U.S. locations across 22 states and Washington, D.C., after adding a record 15 locations during that fiscal year. Kura Sushi USA’s FY2025 results
In FY2026 Q2, comparable sales rose 8.6%, comprising 4.3% traffic growth and 4.3% price/mix growth. Yet the company reported a net loss of $1.7 million for the quarter. Food and beverage cost increased to 30.4% of sales from 28.7% a year earlier, which the company attributed primarily to tariffs on imported ingredients, partly offset by menu-price increases. Labor cost fell to 30.7% of sales from 34.8%; management attributed the change to operational efficiencies, pricing and better sales leverage, partly offset by wage inflation. In Q3, comparable sales were down 0.4%: traffic increased 0.4%, while price/mix decreased 0.8%. The company reported net income of $0.4 million. It said cost of goods sold as a share of sales was 200 basis points higher than in the year-earlier quarter because of tariffs, while restaurant-level operating margin improved 90 basis points year over year. A strong Q2 followed by a weaker Q3 is a short sequence, not proof of a lasting acceleration or decline. It does show that traffic, prices, input costs and margins can move in different directions.
Why the Japanese parent’s results need separate context
Kura Sushi, Inc., the Japanese parent, reported nine-month FY2026 net sales of ¥189,684 million, up 4.4% year over year, and operating profit of ¥2,845 million, down 45.2%. Its North America segment reported external sales of ¥37,204 million and a segment loss of ¥645 million under the release’s segment presentation. These are consolidated parent-company figures under Japanese GAAP for the nine months ended July 31, 2026, released September 11, 2026. The English release is a translation. They cover a different entity, accounting basis and period from Kura Sushi USA’s U.S.-only dollar results, so they should not be combined as though they were one set of accounts. The parent results add an important qualification: sales growth does not automatically mean operating profit is improving. They do not by themselves identify the causes of the decline or establish the economics of an individual U.S. restaurant.
What Kura’s expansion does—and does not—say about the future
Kura’s growth is evidence that one operator sees room to expand a technology-supported revolving-sushi concept in the United States. The company’s stated plans and store additions make the format’s development concrete; its uneven comparable sales and cost pressures show why expansion alone is not a verdict on durability.

The more defensible outlook is conditional. Conveyor-belt dining may have a future where the circulating selection, made-to-order convenience, service technology and entertainment work together for a particular market and cost structure. Whether those features reliably improve labor productivity, profitability or repeat visits is not established by the company descriptions and financial results cited here. Nor does one company’s trajectory demonstrate what will happen to every revolving-sushi or conveyor-belt restaurant.
