When will Thai Bird open in Castle Hills?
There is no confirmed opening date in the latest reporting. On October 1, 2026, the San Antonio Current reported that the restaurant would begin serving soon but that its owners had not announced a grand opening date. Thai Bird’s official locations page also describes Castle Hills as coming soon. Those are the latest available status statements, not confirmation that service has begun.
A March 24, 2026 interview included chef and co-owner David Gilbert’s estimate that the restaurant would open in six to eight weeks. That was a forecast at the time, not a scheduled or confirmed date; later reports continued to describe the location as upcoming. See the March interview and the October 1 update.

What will the Castle Hills location serve?
Thai Bird’s signature is Asian-inspired, gluten-free fried chicken, and the restaurant also offers a curated wine list, according to the October Current report. The gluten-free description applies to the signature chicken; it is not a guarantee that every menu item or preparation is suitable for people with celiac disease or other medical dietary needs. Anyone with an allergy or strict dietary requirement should ask the restaurant directly about ingredients and cross-contact when it opens.
An August 11, 2026 MySA report described a broader planned menu with Thai-inspired rotisserie chicken, tenders, wings, lemongrass tofu, pad Thai and fire-roasted lamb curry. Those are examples reported during the build-out, not confirmation of the final or current Castle Hills menu. The same report covered construction progress at the site: MySA’s August menu and location report.

How is this location different from Thai Bird’s existing restaurant?
Thai Bird began as an outpost at Make Ready Market in 2023 and later established a brick-and-mortar restaurant at 6401 Broadway in Alamo Heights. Castle Hills is an additional eatery, not a replacement: the Current reported that the Alamo Heights location would continue serving.
| Location | Address | Status reported |
|---|---|---|
| Alamo Heights | 6401 Broadway, San Antonio | Existing location; listed on Thai Bird’s official locations page |
| Castle Hills Market | 2211 NW Military Highway, Suite 121, Castle Hills, TX 78213 | Coming soon on the official page; no grand opening date announced in the October 1, 2026 report |
The current address and status are listed on Thai Bird’s locations page. The opening status and continuation of the Alamo Heights outpost were reported by the San Antonio Current.
Who is behind Thai Bird?
Chef David Gilbert and co-owner Kristin Alvarez run Thai Bird. In a statement reported by the Current about the Castle Hills opening, Gilbert said: “We wanted to create something that brings those flavors together with the comfort of a neighborhood restaurant,” and “Castle Hills gives us the opportunity to introduce Thai Bird to a new community while staying true to what made people connect with us in the first place: really great food, hospitality and a genuine sense of community.”
