What Puratos and California Cultured announced
Puratos and California Cultured are collaborating on a professional chocolate product containing cultured cocoa. Puratos described itself as the first company preparing to bring such a professional product to market. That “first” claim comes from the company’s announcement, rather than an independent market assessment.

Puratos Chief R&D Officer Paul Baisier said the project reflects the company’s approach of exploring emerging technologies with partners and turning promising science into products for customers. California Cultured CEO Alan Perlstein said chocolate makers need an ingredient that behaves and tastes like cocoa and is reliably available. Those are company-provided statements about the project’s aims, not published performance results. Puratos’s 24 February 2026 announcement gives the companies’ description and target.

The companies call their ingredient “cultured cocoa.” In this case, lab-grown cocoa refers to cocoa plant cells grown in a controlled process, not a finished consumer product grown in a laboratory. Futurism reported that California Cultured selects cocoa plant cells and grows them in nutrient tanks. Puratos’s announcement does not provide technical specifications for the process, so the available sources do not establish details such as the growth medium, production scale, or product testing. When and where it may be available
Puratos is targeting commercial availability to its U.S. customers toward the end of 2026. This is a company target, not a confirmed delivery date or evidence of current availability. The announcement describes a professional product for Puratos’s business customers; it does not announce a retail launch or a purchase option for consumers.
Why the companies say cultured cocoa matters
Puratos describes cultured cocoa as a potential “climate-independent and sustainable complement to traditional cocoa farming.” The company says the approach could help manufacturers with consistency in quality and supply. These are the company’s rationale and intended benefits; the announcement does not provide independent measurements showing environmental gains, reliable supply at commercial scale, or effects on cocoa farmers.

What is not yet established
The cited announcement and reporting leave several practical questions unanswered. They do not establish production capacity, price parity with conventional cocoa, consumer acceptance, or quantified environmental and farmer impacts. Those comparisons matter because a promising ingredient is not automatically a cost-effective or large-scale substitute for farmed cocoa.
Regulatory status is also not confirmed by these sources. Futurism reported that California Cultured had been seeking U.S. regulatory approval, but that report does not establish a filing or an FDA decision. The FDA explains that, under the Federal Food, Drug, and Cosmetic Act, a substance added to food is generally a food additive subject to premarket review unless it is generally recognized by qualified experts as adequately shown safe for its intended conditions of use or is otherwise excepted. GRAS means “Generally Recognized as Safe”; it is a legal status within that framework, not an FDA certification.
