Get refrigerated and frozen foods into temperature control first, keep raw animal products separate, then portion and freeze anything you cannot use soon. FDA and USDA guidance allows no more than two hours unrefrigerated at ordinary room temperatures—or one hour when the air is above 90°F.
What to do first when you get home
- Make room before unpacking. Clear space in the refrigerator and freezer so food can be stored without blocking cold-air circulation. If you do not know whether the appliances are cold enough, check them with an appliance thermometer rather than relying on the control dial.
- Put chilled and frozen items away promptly. The FDA and USDA say refrigerated foods should not sit at room temperature for more than two hours, or one hour if the air temperature is above 90°F. Those are maximum limits, not targets for a long unloading session. The FDA’s food-storage guidance gives the same limits.
- Separate raw animal products. Keep raw meat, poultry, seafood, and eggs apart from produce and ready-to-eat foods while shopping and transporting groceries. At home, place raw meat, poultry, and seafood in leak-resistant packaging or a container, positioned so juices cannot drip onto other food. Cover or seal refrigerated food.
- Sort by when you will use it. Keep items you expect to use within their recommended refrigerator window chilled; divide surplus into meal-sized portions and freeze it promptly. Label packages with the contents and date or intended meal to make the bulk shop easier to manage. A label helps with organization but does not extend a food’s safe storage time.
Set refrigerator and freezer temperatures
Keep the refrigerator at or below 40°F (4°C) and the freezer at or below 0°F (-18°C), the targets recommended by the FDA and USDA. An appliance thermometer provides a direct check; a dial setting alone does not tell you the actual temperature. See the FDA’s refrigerator and freezer guidance and the USDA’s Food Safety Basics.
Which bulk foods should you use or freeze first?
Prioritize foods with the shortest refrigerated storage windows. USDA guidance gives these timeframes for fresh meats and cooked leftovers:

These are general household recommendations, not a complete storage chart for every grocery item. Follow package directions, and use the USDA’s detailed food-safety resources for specific categories.

Portion and freeze surplus safely
Freezing is useful when the warehouse-size package is more than your household can use in time. Divide foods into amounts suited to a meal before freezing so you can thaw only what you need. Seal portions in freezer-safe packaging, remove excess air where practical, and label the contents and date. These are organizational practices; no particular bag, container, or sealing device is required by the cited guidance.
For cooked leftovers, use shallow containers to help them cool more quickly, then refrigerate or freeze them promptly. Reheat leftovers to 165°F, as USDA advises in Leftovers and Food Safety.

Food kept continuously frozen at 0°F remains safe indefinitely, according to the FDA; recommended freezer storage durations generally address quality rather than safety. - Plan meals around the most perishable items first.
- Freeze suitable surplus in portions soon after the trip rather than waiting until it is close to spoiling.
