The Dubai-style chocolate bar helped turn pistachio into one of confectionery’s most visible flavors. U.S. sales of pistachio-filled chocolate jumped in 2025, but the category was still small beside chocolate overall—and crop conditions, geography and supply also shaped pistachio prices and availability. The evidence points to a powerful demand wave, not a single product causing every price increase or shortage.
What is Dubai chocolate?
The original bar associated with Dubai’s FIX Dessert Chocolatier dates to 2021. It combines a chocolate shell with pistachio cream and crunchy shredded kadayif pastry, also called kataifi or knafeh pastry; some versions add tahini. The contrast between smooth filling and crisp pastry became a recognizable template.
“Dubai chocolate” now describes a wider category, not just FIX’s original product. Bars from other makers and spin-offs such as croissants, milkshakes and ice cream borrow the flavor combination or its visual style. A generic Dubai-style bar should not be mistaken for the original FIX bar. The Associated Press reported the format’s expansion beyond bars in October 2025.
How did the bar become a pistachio craze?
Social media widened the bar’s reach by 2023, making its thick green filling and crunchy center easy to recognize and reproduce. That visibility helped carry pistachio from a familiar ingredient into a headline flavor across sweets. AP reported that Google searches for “Dubai chocolate” climbed rapidly early in 2025, peaked in March and remained elevated when it published its October report.

Retailers also described unusually strong interest. Din Allall of The Nuts Factory said, “I don’t call this a ‘trend’ anymore — it’s a whole new thing,” while Stew Leonard Jr., CEO of Stew Leonard’s, said, “I’ve never seen a single item sell like this in my 50 years of retailing.” These are retailer observations, not audited measurements of the bar’s impact on the entire pistachio market.
What do U.S. sales figures show?
NielsenIQ data reported by AP show a dramatic year-over-year increase in pistachio-filled chocolate unit sales, while also putting the category’s scale in perspective.

These NielsenIQ figures, reported by the Associated Press, cover U.S. retail sales, not global consumption or total pistachio use. The growth rate is striking, but the dollar comparison makes clear that pistachio-filled chocolate remained a small slice of chocolate sales.
Why did pistachio prices and supply come under pressure?
Demand growth met agricultural supply that varies by country and crop year. FoodNavigator reported in April 2025 that pistachio prices were €6.65 per pound in 2024 and €8.96 per pound in 2025. Those are the report’s dated price figures, not current quotes. It also reported that Iranian exports to the UAE rose 40% over the six months ending March 2025 compared with total exports in 2024, while U.S. supply was down 20% over the 12 months to February 2025.

The market picture changed with later harvest and forecast data. USDA’s Economic Research Service reported record U.S. pistachio production of 1.58 billion pounds in 2025. Its March 2026 outlook put beginning stocks for the 2025/26 marketing year at about 139 million pounds—40% below the previous year—while estimated gross inventory was 28% higher than the previous season. Production, beginning stocks and gross inventory measure different things; a record harvest does not mean every supply measure rose by the same amount.
Separately, USDA’s Foreign Agricultural Service forecast global pistachio production of 1.1 million metric tons for 2025/26, down 8%. It forecast U.S. production at a record 713,000 tons, up 43%, and attributed the global decline to lower production in Turkey, Iran and Syria that offset U.S. gains. The different U.S. production figures are from different USDA reporting measures and should not be treated as interchangeable.

In short, the bar contributed to a visible demand surge, while crop cycles and regional production shaped how that demand met supply. The available figures do not isolate how much of global pistachio price movement or supply pressure the Dubai chocolate craze alone caused.
