How Savor Says It Makes Butter From CO₂—and Whether You Can Buy It

Savor says heat and pressure can turn carbon gases into animal- and plant-free fats. Here’s what the company has announced about its butter, production plans, availability, and climate claims.

Savor says it makes butter without milk or plant oils by turning carbon-based gases—including captured carbon dioxide—into fats. The company announced the product in March 2025, naming a small group of restaurants and a bakery as expected early customers. The sources available here do not establish broad consumer retail availability.

How can carbon dioxide become butter?

Savor describes its method as a thermochemical process. It says heat and pressure convert carbon gases, such as carbon dioxide or methane, into carbon chains; those chains are then converted into fatty acids, which are building blocks of fats and oils. The company has also named green hydrogen among its inputs. Food Processing’s April 1, 2025 account describes the process at this high level, but does not provide enough engineering detail to independently assess or reproduce it.

Savor characterizes the resulting fats as chemically identical to fats people already eat and says it can make different fat compositions. That is the company’s description; the cited coverage does not provide independent analytical results confirming the claim.

Is Savor’s product conventional butter?

No: Savor calls it animal- and plant-free butter, rather than butter churned from milk. The company announced the product on March 20, 2025 and said select restaurants and Jane the Bakery were expected early customers. Its announcement named SingleThread and ONE65 among the restaurant customers. These were announced plans, not evidence of widespread sales. Savor’s launch announcement also described chef evaluations and discussions with consumer packaged-goods companies; it said joint-development agreements were under negotiation, not completed.

For a shopper comparing it with dairy butter or plant-based spreads, the useful questions are not just whether it looks or cooks like butter. The available sources do not provide a full nutrition panel, allergen details, price, or systematic performance comparison. Those details matter for dietary choices and household budgeting as much as the production story.

Can you buy Savor butter now?

The March 2025 announcement pointed to selected food-service and bakery customers, while Inc.’s June 7, 2025 coverage described restaurant menus and consumer packaged goods as planned routes to market. The cited sources do not confirm a current retail listing, so consumers should not assume the product is available in grocery stores or direct to consumers. Availability may change; check Savor’s own channels or named food-service partners for current offerings.

What production scale has Savor reported?

Savor said its pilot production facility in Batavia, Illinois, covered 25,000 square feet, and its March 2025 announcement said initial capacity to produce metric tons would begin in 2025. Food Processing also reported the facility and the company’s self-affirmed GRAS status. These are company-reported milestones, not independent confirmation of current production or regulatory review by an agency.

Inc. reported on June 7, 2025 that Savor expected to reach 100 kilograms of fat per week by mid-2025. That was a forecast based on company plans; the cited article does not establish that the target was achieved. The facility announcement and production forecast should therefore be read as dated signals of intended scale, not proof of 2026 output.

Is butter made from carbon better for the climate?

Potentially lower land, water, or emissions use is part of the appeal, but a feedstock story alone cannot establish a climate advantage. A fair comparison would need a product-specific lifecycle assessment with a clear boundary and comparable alternatives—such as dairy butter and plant-based fats—and would account for inputs including energy and hydrogen as well as production and distribution.

The cited sources do not establish an independently verified lifecycle assessment or comparative emissions figure for Savor’s commercial butter. The company has argued for environmental benefits, but without a comparable, independently reviewed assessment, readers cannot quantify whether or how much this product reduces environmental impacts.

How Savor differs from other CO₂-based fat projects

Green-On is a separate Swedish company. Its website describes work using carbon dioxide, water, and electricity to develop saturated fats and alternatives for ingredients such as palm oil, coconut oil, and dairy fats. It is not Savor, and its process, location, and development examples should not be attributed to Savor. Green-On’s website lists its own food-development work, including a coconut substitute made with AAK’s bakery lab.
