Savor makes its animal- and plant-free butter by turning carbon-containing inputs and hydrogen into fats through a multi-step industrial process. “Out of thin air” is shorthand: the process still needs physical inputs, energy, and production equipment. Savor announced a commercial launch in March 2025 through select restaurant and bakery partners, but the sources available do not establish a direct-to-consumer retail or Amazon product.
How can butter be made without dairy or plants?
Savor’s process starts with carbon from sources such as carbon dioxide or methane. The company describes combining that carbon with hydrogen in the presence of a catalyst to produce hydrocarbons, then converting those into fatty acids. The fatty acids are combined with glycerol to make triglycerides, which can be formulated into fats and oils. Savor’s process description and mission page explain the route.
In other words, the product is not material-free: carbon and hydrogen are inputs, and the process requires energy and industrial equipment. “Out of thin air” captures the idea of making fat without growing crops or raising animals; it does not mean butter appears without feedstock or manufacturing.
Is Savor’s product dairy butter?
No. It is a formulated fat, not butter churned from dairy cream. Savor says the fats it makes are chemically identical to fats already eaten, and that it can tailor fatty-acid profiles and formulations for different uses. That does not establish that every formulation performs exactly like dairy butter in every recipe. The sources here provide no independent comparative taste test, consumer price data, or evidence that Savor is better than dairy or plant-based alternatives across applications.

Can you buy Savor butter?
Savor announced a commercial launch on March 20, 2025, initially through selected restaurant and bakery partners. The announcement named SingleThread, ONE65, and Jane the Bakery among first customers expected that year. It documents a food-service launch, not a consumer retail rollout; the cited sources do not establish a direct retail package or Amazon listing. See Savor’s launch announcement.
The regulatory wording matters, too. Savor said it had achieved self-affirmed GRAS status and that this allowed legal U.S. sales. That is the company’s characterization of its status; it should not be described as FDA approval. The announcement does not independently verify the underlying regulatory documentation.
What was known about production scale?
In a March 2025 update, Savor described a 25,000-square-foot pilot production facility in Batavia, Illinois, and said it had produced its first run in 2024. It set a target of producing 100 kilograms per week by mid-2025 and said it was designing a first commercial facility for launch in 2027 and beyond. These were company statements and plans at the time, not confirmation that the output target was met or that the future facility is operating. The dated details appear in Savor’s scale update.

A later business development was announced on July 9, 2026: Savor and AAK said they would jointly develop and commercialize specialty fat ingredients for dairy-alternative and bakery applications. That partnership signals B2B development, but does not establish consumer availability or production volumes. See the partnership announcement.

In an August 17, 2026 account of an independent, ISO-certified life-cycle assessment, Savor reported that its first commercial alternative milkfat had more than 80% lower greenhouse-gas emissions, more than 800 times lower land use, and more than 10 times lower water use than conventional milkfat. These are company-reported results of a third-party assessment, not a blanket finding about every Savor product. Savor’s account is available in “How Sustainable are Savor’s Fats Made from Scratch?”.
The comparison used a cradle-to-gate functional unit of one kilogram of fat. Savor says the assessment used ghee as a proxy for anhydrous milk fat where dairy data were limited, and excluded land-use emissions from the first formal greenhouse-gas comparison. The company also says results depend on the carbon source and energy assumptions. Those boundaries mean the headline percentages should not be read as evidence of zero emissions or as a universal footprint for all Savor fats.

How to judge claims about a new fat
For a useful comparison with dairy butter or plant-based alternatives, match the intended application and examine the same factors on both sides:
- Composition: what fats and other ingredients are in the formulation?
- Performance: how does it taste, spread, brown, or behave in the recipe you care about?
- Inputs: what carbon source and energy supply the manufacturing process?
- Environmental accounting: are the functional unit, system boundaries, proxies, and emissions assumptions comparable?
- Practical access: is the product available to you, and at what price?
For Savor specifically, the cited information supports a selective food-service launch and company-reported environmental comparisons for one assessed alternative milkfat. It does not establish a current consumer price, a retail listing, or independently verified performance against other butters.
