Compare oil capacity and vat layout first, then assess burner input alongside model-specific performance information. Before buying, confirm the fryer’s liquid-propane configuration, connection and supply requirements, certification, dimensions, and installation instructions.
How to compare commercial propane fryers
Start with the work the fryer must handle during your busiest service, not its BTU rating alone. Oil capacity and the number and layout of vats and baskets help establish whether a unit suits your expected batch sizes and peak demand. Burner input is useful context, but it is not a substitute for comparable recovery-time data. The available product information does not provide recovery-time tests, fuel-consumption comparisons, or operating-cost figures.
- Capacity and configuration: Compare stated oil capacity, vat count, and basket layout with your batch sizes and menu.
- Heat input: Compare BTU ratings in the context of capacity. If recovery time matters, request performance data measured on a comparable basis.
- Propane connection: Confirm the exact unit is configured for LP and check its connection dimensions, supply pressure, and regulator instructions.
- Certification and documentation: Review the nameplate and current documents for the exact model, and confirm the relevant certification is accepted in your jurisdiction.
- Daily operation: Check features such as drain access, cold-zone design, baskets, cleaning requirements, and service or parts support in current model documentation.
- Site fit: Confirm physical dimensions and installation requirements before committing to a location.
Documented model examples—not a ranking
These two examples illustrate why specifications should be considered together. Their stated capacity and burner input do not establish which fryer cooks faster, uses less fuel, or costs less over its service life.
| Model | Published specifications and features | Certification claims in the cited source | What to verify |
|---|---|---|---|
| COOKLINE CF75-LP | USR Brands’ datasheet, revision 08-2025, states 75 lb oil capacity and 150,000 BTU input. It lists two baskets, thermostat control, a cold-zone pot, and casters. | The supplier states ETL and NSF-related certification. | The datasheet says specifications may change. Verify the exact fryer’s nameplate, current listing, LP configuration, and documentation before purchase. |
| Flamaster FLM-F4-LP | The manufacturer describes a four-tube burner model rated up to 120,000 BTU, with a 3/4-inch NPT gas connection. | The manufacturer states CSA and NSF/ANSI 4 certification. | Confirm current product documentation and the exact propane configuration, connection and supply requirements for the unit being purchased. |
These figures are model-specific claims, not category-wide benchmarks or independent performance measurements. The sources do not establish current prices or availability.

Confirm the propane supply and installation requirements
Do not assume a fryer can be connected to an existing propane line merely because its product name includes “LP.” Check the selected model’s current installation manual and have a qualified installer verify compatibility with the site’s supply and other gas-fired equipment.
- Identify the exact fryer and fuel configuration. Match the model and nameplate to the manufacturer’s current documentation.
- Check the connection and supply specifications. Verify connection size, required supply pressure, and regulator instructions for that fryer; do not transfer figures from another model’s manual.
- Assess total gas demand. Have the installer confirm that the supply line and regulator arrangement are appropriate for all connected gas-fired appliances. Ultrafryer’s manual, for example, says commercial cooking equipment requires a pressure regulator on the incoming service line and that gas lines must be sized for all connected equipment; its specific figures apply only to the fryer models it covers.
- Verify site and local requirements. Follow the selected model’s instructions and consult the local authority or qualified professionals about requirements for the installation. Requirements can vary by location and are not established by the product examples above.
Check certification for the exact unit
Certification statements in product descriptions are not interchangeable: the COOKLINE supplier datasheet and Flamaster manufacturer page make different claims. Ask for the current documentation tied to the exact model, inspect the unit’s nameplate, and confirm that the certification and installation are acceptable where the fryer will be used. Do not infer that a certification claim for one model applies to every commercial propane fryer.

Plan for safe operation and hot oil
Use the selected fryer’s current installation and operating manual, and arrange installation in accordance with manufacturer instructions and qualified local guidance. Hot oil is a significant hazard: Ultrafryer Systems’ manual identifies burns from hot shortening as a major safety concern for its Premix Gas fryer. Establish procedures and training for safe filling, cooking, draining, cleaning, and handling of hot oil. The cited material does not establish universal clearance, ventilation, or fire-suppression requirements, so verify those for the specific equipment and location.
