U.S. beef supply is under pressure: USDA’s outlook reports historically low fed-cattle slaughter and lower beef production forecasts for 2026 and 2027. That can keep beef prices elevated, but it does not prove that every meat category is getting more expensive. Cattle prices have also fallen from spring highs, a change in producer-market prices that does not by itself show grocery-store prices are falling.
Why beef prices are under pressure
The clearest current supply constraint is in beef. USDA Economic Research Service (ERS) reports historically low fed-cattle slaughter and lower U.S. beef production forecasts for 2026 and 2027. With fewer cattle moving through slaughter, less beef is expected to be produced than previously forecast, supporting elevated prices. The ERS Cattle & Beef market outlook also says cattle-price expectations were reduced after prices retreated from spring highs.
Those findings are not contradictory. Supply can remain tight even as cattle prices decline from a recent peak. A lower cattle price is not the same measure as the retail price of beef, and it does not establish that shoppers will see an immediate drop at the grocery store.
“Meat prices” do not move as one market
Beef, pork, and poultry have different production cycles and supply conditions. USDA’s monthly Livestock, Dairy, and Poultry Outlook analyzes these markets separately using updated supply-and-demand estimates. A beef supply constraint should not be treated as evidence that chicken or pork prices are climbing for the same reason or at the same pace.

For context, USDA ERS’s March 2025 long-run analysis projected U.S. poultry consumption of 103.6 pounds per person in 2026, rising to 110.4 pounds in 2034. These are projections, not observed 2026 consumption or a current monthly price forecast; the analysis used information available in October 2024 and was not updated for later monthly revisions. ERS said the projected increase accounted for most of the use of expanding chicken supplies. How to tell whether meat is actually getting more expensive
Compare like with like: the same country, dates, product or cut, and price stage. A live-cattle or farm price is not a retail beef price; wholesale prices are another step in the chain. ERS’s meat price-spreads data compare farm, wholesale, and retail prices for selected beef, pork, and broiler products.

- Farm or livestock price: what producers receive for animals or products.
- Wholesale price: a price at an intermediate point in the supply chain.
- Retail price: what consumers pay for a specified product or cut.
Without a dated retail comparison for a specific product, it is not possible to say from the cattle outlook alone how much a shopper’s beef bill has changed, or whether pork and chicken have risen alongside it. USDA’s September 2026 outlook is the latest monthly report surfaced, but its available summary does not provide numeric forecast tables. The detailed July 2026 outlook was published July 16, 2026; neither report summary supports a single current percentage increase for all meat.

For budgeting, track the cuts and package sizes you actually buy rather than relying on a broad headline about “meat prices.” Compare current shelf prices with your own past receipts, and consider other cuts or meal ingredients when your usual choice strains the budget. Switching to pork or poultry may be an option, but current evidence here does not quantify savings or establish that shoppers are making that substitution.
