Announced in November 2023 as a planned summer opening, it was later reported by Tourism Western Australia to have opened in February 2024. The more precise description is Perth’s first urban winery—not Perth’s first winery generally.
What makes H&C an urban winery?
Rather than making wine at a regional vineyard and bringing finished bottles into the city, H&C brings parcels of Western Australian grapes into Fremantle. Tourism Western Australia says the grapes are crushed, stored and fermented on site in collaboration with local winemakers. Broadsheet also reports that the wine is bottled at the venue.
The model connects grapes from WA wine regions with an inner-city production space and a place where visitors can drink and buy the resulting wines. Visit Fremantle describes H&C as a fully operational winery as well as a bar, restaurant, events space and cellar door.
Where it is and how the opening unfolded
The venue is at 181 High Street, Fremantle, in premises that included the former Mother restaurant and adjacent space. PerthNow’s 25 November 2023 announcement described a planned summer opening. Tourism Western Australia subsequently recorded that H&C opened in February 2024.

Those dates refer to different stages: the first was the announced plan; the second is the later reported opening. For current hours, menus, events or booking availability, check the H&C Urban Winery website before visiting.
Who founded the venue?
The November 2023 announcement identified hospitality operators Phil Thompson and Ross Macpherson, wine distributor Scott Spalding, and former West Coast Eagles players Will Schofield and Chris Masten as the group behind the project. Schofield and Masten had previously produced a small liquor label and run pop-ups during the pandemic, then released limited wines under the Heroes & Comrades name before joining forces with Spalding.

Thompson told PerthNow the group had been trying to get the project off the ground for five years. The former Mother restaurant offered an established hospitality space, while the adjoining former Good Sammy’s store provided room for winery production. PerthNow reported in 2023 that the City of Fremantle had approved the project under a tavern licence; that announcement should not be taken as a statement of the venue’s current approvals or operating conditions.
What visitors can do there
H&C combines wine production with hospitality rather than operating only as a tasting room. Its official site advertises lunch and dinner, bookings, a private Barrel Room and an online shop for its wines. The shop says it ships daily; check the site for current stock, shipping terms and venue details.

For co-owner Phil Thompson, the aim was to make wine approachable without making learning compulsory. As quoted by PerthNow in November 2023, he said: “We want people to have fun with it, learn a little if they choose, but ultimately it’s about celebrating wine and enjoying it with friends and family in a great setting.”
Why the “first winery” wording needs context
The original headline’s broad phrase “Perth’s first winery” can imply that no winery previously existed anywhere in Perth. The later descriptions from Visit Fremantle and Tourism Western Australia use the narrower label “urban winery.” That qualification matters: H&C’s distinction is bringing grape processing and winemaking into the city, alongside a cellar door and hospitality venue.

Thompson described the project as a way to showcase WA produce, saying the plan was to work with grapes from the state’s varied regions and local winemakers. The venue therefore offers an urban place to encounter wines made from regional fruit, rather than a substitute for the vineyards where that fruit is grown.
