Robot Bartenders: What CES 2024 Showed—and Why Hospitality Workers Worry

CES 2024 put robot bartenders in the spotlight, but systems such as Richtech’s ADAM automate selected drink-making tasks—not the full work of a bartender. Their spread could still reshape staffing, job duties and worker protections.

CES 2024 made robot bartenders a vivid symbol of automated hospitality, but it did not show a machine ready to replace an entire bar staff. Richtech Robotics demonstrated ADAM, a two-armed robot designed to prepare drinks and interact with customers. Its capabilities make beverage automation commercially plausible; its limits leave people responsible for much of the work that makes bartending a job. For workers, the concern is not only whether a robot can mix a drink, but whether a venue can serve the same crowd with fewer employees.

What CES 2024 actually showcased

CES ran in Las Vegas from January 9 to 12, 2024. Among the service-technology demonstrations, Richtech Robotics presented ADAM as a multi-purpose beverage robot: a system for cocktails, coffee and boba tea, with customer interaction as part of the pitch. Richtech said CES upgrades included more human-like movement, conversational interaction and the ability to pour draft beer. These were company descriptions of a trade-show demonstration, not independent measurements of service speed, reliability or profitability.

ADAM was the clearest CES example tied directly to robot bartending; the show was not a coordinated launch of a single industry-wide system. Nor does the label “robot bartender” describe one standard kind of machine. It can refer to a dispenser that repeats a limited menu, a robotic arm that handles bottles and tools, or a customer-facing installation that combines drink preparation with ordering software and conversational features. Richtech’s CES announcement is at its investor-relations site; the company also published a CES 2024 overview.

What ADAM can do—and what its specifications establish

Richtech’s current product page describes ADAM as a dual-arm system that can prepare cocktails, mocktails, coffee and boba, offer recommendations, converse with customers, and work from preset or customized menus. The company says it can integrate with existing equipment through a custom deployment plan. Its product page lists a carrying capacity of 11 pounds per arm, six degrees of freedom, a wingspan of about 6.9 feet, dimensions of approximately 19.6 by 32.6 inches, a weight of 110 pounds, and power use of 540 watts. Richtech also says the robot is NSF certified and estimates routine maintenance at about 20 minutes a day. Those are manufacturer-provided specifications and estimates; the page does not establish independent operating results or the scope of the stated certification. A machine can execute a supported recipe without understanding bartending in the broad human sense. “AI” may refer to a conversational interface or another feature alongside structured recipe automation; it does not mean the system can improvise any drink or independently make every service decision. The product page describes supported menus and custom integration, not unrestricted cocktail-making. The physical dimensions also matter: a venue needs room for the machine, its reach, ingredients, staff access and safe customer movement.

Which parts of bartending are easiest to automate?

The best way to assess job risk is to break the work into tasks. Preparing a defined recipe is not the same as managing a bar. Repetitive actions with predictable inputs are easier to automate than decisions that depend on people, context or safety.

AI-enabled service robot Combines preparation with some customer-facing interaction. Conversation does not establish judgment about safety, complaints or unusual requests.
Human bartender Mixes and serves while recommending drinks, coordinating work and responding to customers and changing conditions. Requires staffing, but can handle many exceptions and social responsibilities that a programmed station may not.

Tasks most exposed to automation include measuring and dispensing ingredients, making the same recipes repeatedly, pouring draft beer, and preparing predictable high-volume orders. Ordering through a kiosk or app can automate a different part of the process without automating preparation.

Other responsibilities are harder to hand off: checking identification, judging possible intoxication, refusing service, resolving payment disputes, responding to complaints, coordinating with security or kitchen staff, and managing a crowded or disruptive bar. People also handle restocking, sanitation, spills, breakage, equipment failures and many requests that do not fit a preset menu. A robot may make the drink while a human remains accountable for the service around it.

Why Las Vegas workers took the technology seriously

The job-security concern did not begin with one CES demonstration. Las Vegas hospitality workers had been negotiating over a wider set of technologies, including self-check-in, mobile ordering, automated food preparation and service machines. The Culinary Workers Union Local 226 and Bartenders Union Local 165 secured technology-related provisions in contracts covering approximately 40,000 members, according to reporting by the Associated Press and the Culinary Union.

Reported protections included advance notice of technology that could eliminate jobs, training, opportunities to transfer and severance of $2,000 per year worked when a position was eliminated by technology or artificial intelligence. That figure is specific to the reported Las Vegas contract provisions; it is not a general entitlement for hospitality workers elsewhere. Union concerns and the CES demonstrations were also discussed by PBS Nevada Week. PBS reported that the union had lost 10,000 jobs after the pandemic, but that figure should not be attributed to robots or AI.

For workers, “the robot will assist staff” does not settle the question. A venue could retain bartenders but schedule fewer per shift, reduce hours, change job duties or make some entry-level roles less available. Automation can alter bargaining power and staffing ratios without eliminating every job title.

Where automated beverage service is most likely to fit

Early deployments make the most operational sense where demand is high, menus are standardized, layouts are controlled and queues matter. Stadiums, casinos, airports, theme parks, cruise ships, food halls, event spaces and branded entertainment venues may also benefit from the novelty of a robotic installation. A small neighborhood bar with a tight floor plan, an evolving cocktail list and customers who value personal relationships is a different proposition.

There is evidence of venue use beyond a trade show, though it should be described carefully. Richtech announced ADAM’s installation at Globe Life Field, where it served cocktails and mocktails alongside human bartenders during the 2024 MLB All-Star period; the company said the setup was intended to help with waits and workload during busy games. That company announcement documents a specific installation, not an independent assessment of its results: Globe Life Field announcement.

Another vendor, Makr Shakr, describes its Toni robotic bartender as capable of shaking, stirring and muddling. The company claims capacity of up to 80 drinks per hour and storage for more than 150 bottles. These are vendor figures, not independently verified benchmarks; a quoted maximum does not establish throughput during a real rush with restocking, cleaning and customer delays. Richtech also announced a planned 240-location Ghost Kitchens and Walmart-related rollout. The initial announcement was a non-binding letter of intent, not proof that 240 robots were installed. Later company releases document selected installations, including a Ghost Kitchens installation and an One Kitchen installation. The distinction matters: a planned rollout and an operating location are different evidence.

The business case has to include the work around the robot

Operators may consider automation to improve consistency, manage peak demand, reduce repetitive preparation or add an attraction. Richtech presents ADAM as a way to ease labor pressure and help staff focus on other work. Makr Shakr similarly markets Toni as a co-worker. These are vendor framings, not independent proof that a system lowers costs or improves customer satisfaction.

A credible financial comparison should not set a robot’s price against one bartender’s hourly wage and stop there. Richtech does not publish a standard ADAM purchase price on its product page, and directs prospective buyers toward demonstrations, custom integration and sales contact. A buyer would need to account for installation, service arrangements, training, ingredients, downtime, cleaning, restocking, supervision and any changes to staffing. Before buying or renting, a venue should request operating evidence from a comparable site and clarify:

  • Installed cost, rental terms and service-level commitments.
  • Real throughput during peak periods, not just a demonstration or maximum-rate claim.
  • Who cleans, restocks, troubleshoots and maintains the machine, and how much staff time that requires.
  • Point-of-sale integration, network requirements, parts availability and a manual fallback if the system fails.
  • Food and beverage sanitation procedures, emergency-stop controls, insurance and liability allocation.
  • How age checks, intoxication assessments and refusal of service are handled under applicable local rules.
  • What customer, payment or conversational data is collected and how it is managed.
  • How job duties, training, hours, tips or service charges may change, and what notice or transfer paths workers receive.

Jurisdictional liquor rules vary, and the available sources do not establish one universal regulatory framework for robot alcohol service. A venue must identify who is responsible for age verification, safe service and emergencies rather than assuming the machine can take on a licensed worker’s duties.

What a robot bartender means for jobs

The likely near-term story is task substitution and job redesign, not the disappearance of bartending as a profession. Some repetitive preparation may require fewer labor hours in a particular venue. Other work—customer care, safety decisions, exception handling, maintenance and supervision—may remain with employees or shift to different roles. A robot that supports existing staff can still affect how many people a business schedules and which jobs serve as entry points into hospitality.

Who benefits from higher output is a labor and business decision, not a technical feature. Owners might capture lower labor costs, customers might get shorter waits, vendors might earn recurring service revenue, and workers might gain new responsibilities—or face reduced hours and greater workload. The outcome depends on venue economics, staffing choices and negotiated protections, not simply on whether the arm can pour a drink.

What a fair rollout can look like

The Las Vegas contract provisions offer a concrete example of treating technology as a workplace issue: notice, training, transfer opportunities and a financial cushion when a position is eliminated. The U.S. Department of Labor’s later AI principles emphasize worker involvement, transparency and worker rights, but they are guidance rather than a blanket federal requirement prescribing how every hospitality employer must introduce a robot. The principles are available from the Department of Labor.

For a venue, a responsible rollout also means defining a human fallback and assigning responsibility for safety, cleaning and failures before launch. Workers should know whether the system changes headcount, duties, training expectations or tip arrangements, and should have a path to learn the new work if their roles change. Those choices determine whether automation functions as a tool alongside hospitality workers or primarily as a way to reduce their leverage.
