Does the Butterfat Boom Benefit Dairy Farmers?

Higher butterfat can increase a component-based milk check, but it does not guarantee higher dairy farm income. Prices, volume, local formulas and feed costs all matter.

Higher butterfat can increase the component value of a farmer’s milk check when the milk is priced by its components. It does not guarantee higher farm income: milk volume, other components, local pricing rules, commodity prices and feed costs all matter. In 2025, the U.S. all-milk price averaged $21.17 per hundredweight, down $1.38 from 2024, even as milk supply and production of several dairy products increased.

How higher butterfat can raise a milk check

Butterfat, also called milkfat, is the fat portion of whole milk. Under component-based pricing, a milk check can reflect the measured amounts of butterfat, protein and other solids. If the butterfat test rises while component prices and other factors stay the same, the butterfat portion of the calculation can add value to the milk.

That is a pricing mechanism, not a promise of greater net income. A producer’s actual payment depends on the applicable pricing method and milk marketing order, the farm’s volume and component tests, and the prices used in the calculation. USDA explains that Dairy Revenue Protection’s component-pricing option uses butterfat, protein and other-solids prices and tests to calculate covered revenue. What the recent numbers say—and what they do not

A February 2026 report in The Atlantic reported that average U.S. milk fat reached 4.24 percent in 2024, attributing the figure to USDA. The article also linked rising fat levels to breeding and nutrition. The figure is secondary reporting, not a statistic published directly in that article by USDA, so it should not be treated as proof that farmers’ incomes rose.

The broader price picture is more complicated. USDA Economic Research Service reported that the U.S. all-milk price averaged $21.17 per hundredweight in 2025, $1.38 below the 2024 average. Its 2026 dairy outlook says increased milk supply accompanied greater production of butter, cheese, lactose and whey protein concentrate. Wholesale butter, cheese and nonfat dry milk prices averaged lower year over year.

More butterfat can therefore increase the amount of a valuable component available to processors while expanded supply puts pressure on prices. Whether the farm benefits depends on the balance between the value of its milk components and the prices, volume and costs affecting its operation. In the February 2026 Atlantic report, CoBank dairy economist Corey Geiger described an oversupply of butterfat, and Penn State dairy-cattle geneticist Chad Dechow expected a difficult year for farmers. Those are expert assessments reported by The Atlantic, not official USDA forecasts.

Why a product’s retail price is not a farmer’s milk check

The share of a retail food price received by farmers is a different measure from a butterfat premium or a change in farm income. USDA ERS estimated that farmers received 57 percent of the retail price of butter and 19 percent of the retail price of ice cream in 2024. Those figures compare the value farmers received for milk used in the products with the products’ retail prices; they do not show how much an individual farm earned from higher butterfat.

USDA’s farm-to-consumer price-spread data provide the context for those shares. They should not be read as a direct split of each retail dollar for every product or as evidence that a change in retail prices flows through to a farm’s check in the same proportion.

Pricing rules can change the calculation

There is no single universal U.S. milk price formula. USDA’s 11 Federal Milk Marketing Orders approved amendments affecting the formulas used for advanced prices, class prices and component prices. The changes include updated skim-milk composition factors, removal of 500-pound barrel cheddar prices from the mandatory reporting survey, revised manufacturing allowances and a 91 percent butterfat recovery factor. The applicable order and implementation date matter when assessing a farm’s payment.

USDA Agricultural Marketing Service lists the changes and dates in its Federal Milk Marketing Order information. A higher butterfat test does not translate into the same dollar increase for every producer, because the relevant formula and component prices vary with the order and the terms under which milk is marketed.

Risk-management options address different risks

Farmers evaluating the effect of price swings can compare public programs and insurance, while checking current eligibility, enrollment dates and policy terms. Neither option guarantees that higher butterfat will increase a farm’s net income.

Dairy Margin Coverage

DMC is a voluntary USDA Farm Service Agency program that provides assistance when the margin between the all-milk price and average feed cost falls below a producer-selected coverage level. USDA’s current program page lists coverage levels from $4.00 to $9.50 per hundredweight and says Tier 1 coverage increased from 5 million to 6 million pounds beginning in 2026. Dairy Revenue Protection

DRP is an insurance product with class-pricing and component-pricing options. The component option incorporates butterfat, protein and other-solids prices and tests, as well as covered production, in its revenue calculation. Producers should review current policy materials and consult an authorized agent about how coverage applies to their operation. USDA Risk Management Agency’s DRP materials explain the policy.
