FoodTech is no longer synonymous with meat substitutes. In 2026, three distinct models show where the industry is moving: Wonder automates and digitizes foodservice, The EVERY Company makes functional egg proteins through precision fermentation, and UPSIDE Foods grows chicken from animal cells. They are influential examples, not an objective ranking of the three largest companies.
Their progress also shows the sector’s central reality: laboratory breakthroughs and large funding rounds matter less than repeat customers, reliable production, regulatory compliance, competitive costs and improving unit economics.
What counts as FoodTech?
FoodTech covers technology applied across the food system, including artificial intelligence, robotics, digital ordering, delivery logistics, fermentation, cellular agriculture, food manufacturing, nutrition, safety and supply chains. A company can therefore influence FoodTech without selling a novel packaged food.
The three companies below were selected because they represent different technologies, have evidence of real commercial or regulatory activity, and illustrate models other businesses could adopt. Their maturity is different: Wonder is an operating foodservice platform, EVERY is commercializing ingredients for other manufacturers, and UPSIDE has regulated but limited restaurant availability.

Wonder: turning foodservice into a technology platform
What the company does
Wonder combines restaurant brands, proprietary kitchen technology, delivery infrastructure, robotics and AI-enabled operations. Rather than licensing one piece of software, it presents an integrated system for ordering, production and fulfillment.
In July 2026, Wonder announced a $650 million Series D at a $9 billion pre-money valuation and said its location count had increased from 46 to 140 since its May 2025 funding announcement. Those figures show financing and expansion, not profitability. The company’s announcement does not establish that the model works in every market.
The trend it represents
Wonder reflects foodservice convergence: restaurant operations, digital ordering, kitchen automation, brand management and last-mile delivery are managed as one data-driven system. Software may coordinate menus, inventory and routing, while physical automation can improve consistency or throughput.

What automation can—and cannot—prove
- Standardized production may make multi-brand operations easier to replicate.
- Data can support demand forecasting, menu decisions and delivery coordination.
- Robotics does not necessarily mean food is prepared without skilled employees or that costs fall in every location.
- Delivery, labor, rent, packaging, traffic and service fees can still overwhelm operational gains.
- A centralized system may reduce local flexibility and does not guarantee better taste or customer loyalty.
What would validate the model
Investors and operators should look for repeat orders, contribution margin after delivery and labor costs, facility utilization, retention and performance beyond dense urban markets. A high valuation is a financing signal, not evidence of market leadership.
The EVERY Company: precision fermentation for egg proteins
How precision fermentation works
Precision fermentation uses engineered microorganisms in controlled tanks to produce a targeted molecule, such as a protein. It differs from traditional fermentation used for bread, yogurt or beer because the process is designed around a specific functional ingredient.
The EVERY Company develops animal-free egg proteins. Its applications materials describe EVERY Real Egg Protein for uses including plant-based mayonnaise, where egg-like texture and stability are valuable.

The trend it represents
EVERY illustrates biomanufactured ingredients: instead of replacing an entire food category at once, a company supplies one protein, fat, flavor or functional component to existing manufacturers. Potential applications include egg-free baked goods, sauces, protein drinks, sports nutrition and foaming systems.
This B2B route may reach consumers quietly. A familiar product can use a fermentation-derived ingredient without prominently displaying the supplier’s name. The Good Food Institute’s 2026 fermentation report identified more than 163 specialized companies and research institutions working on fermentation-enabled meat, dairy, egg, seafood and ingredient applications. Its report also recorded $357 million raised by companies primarily operating in the fermentation ecosystem in 2025, down from $651 million in 2024.

Public material does not establish a universal retail price, production volume or product-specific life-cycle result for EVERY. Evaluating the company therefore requires asking food manufacturers about repeat orders, scale, regulatory clearance and cost versus conventional egg whites or plant substitutes.

UPSIDE Foods: cultivated chicken enters regulated foodservice
What is cultivated meat?
UPSIDE grows chicken cells in controlled cultivators rather than raising and slaughtering a complete bird. The company says cells originating from a single heritage-breed chicken egg are maintained in a master cell bank and grown with nutrients including water, sugars, vitamins and minerals. This is animal-cell production—not plant-based meat—and the resulting food is neither vegetarian nor vegan. UPSIDE explains its process and status here.
Regulatory and commercial position
The U.S. pathway involves both the FDA and USDA/FSIS. The FDA’s cell-culture consultation inventory, updated February 19, 2026, lists UPSIDE’s cultured chicken cell material with an FDA response date of November 16, 2022. The FDA inventory is a consultation record, not a statement that every cultivated product is approved everywhere.
USDA/FSIS says establishments harvesting or processing cell-cultured meat and poultry must obtain a grant of inspection and meet applicable inspection and labeling requirements. FSIS guidance applies to the U.S.; other countries can impose different rules.

What people can buy
UPSIDE says its chicken is available to the public exclusively through restaurant partners while it works toward larger-scale production and everyday pricing. Its foodservice page lists diced chicken, with shredded chicken and other formats described as coming soon; it reports a 365-day frozen shelf life and a 25% improved cooked yield. The trend—and the bottleneck
UPSIDE represents cellular agriculture, moving meat production from livestock facilities into bioreactors. The hard problems are industrial capacity, growth-medium cost, energy use, facility utilization, distribution and consumer acceptance.
UPSIDE’s site cites a Good Food Institute study suggesting cultivated meat could use up to 90% less land and water and emit up to 90% fewer greenhouse gases. “Up to” is a modeled potential, not a universal measurement of UPSIDE’s current product; outcomes depend on electricity, inputs, recycling, refrigeration, yield and the comparison baseline.

What “revolutionizing” should mean in practice
A launch, patent or funding round is not the same as broad adoption. For any FoodTech company, examine:

- Customers: Are buyers returning, or is demand limited to pilots and early adopters?
- Economics: Are margins improving after energy, labor, logistics and processing?
- Regulation: Which agency has reviewed which product, in which jurisdiction?
- Evidence: Is a benefit company-reported, modeled, independently verified or merely theoretical?
- Availability: Is the product in ordinary retail, selected restaurants, B2B trials or a demonstration facility?
The sector’s funding environment reinforces this discipline. The Good Food Institute reports that investors increasingly emphasize unit economics, scale-up pathways and credible routes to profitability; closures and restructurings have tested optimistic commercialization timelines. The next influential companies will be those that convert technical capability into dependable supply, repeat demand and measurable value.
