Under the Codex standard for sturgeon caviar, the term refers to salted eggs from sturgeon-family fish. Salmon roe, cod roe, and lumpfish roe are other fish-egg products; lumpfish products may be sold under the familiar name “lumpfish caviar,” but they are not sturgeon caviar under that standard.
What the terms mean
Fish eggs, also called roe, are the broad category. The Codex Alimentarius Commission defines fish eggs as non-ovulated eggs separated from ovarian connective tissue; its standard also permits ovulated eggs from aquacultured sturgeon. Codex Standard for Sturgeon Caviar (CXS 291-2010) defines caviar more narrowly as fish eggs from the Acipenseridae family treated with food-grade salt.
The standard includes sturgeon genera such as Acipenser and Huso, as well as other listed genera and their hybrids. So caviar belongs to the wider category of fish eggs, while the species source and salt treatment distinguish sturgeon caviar from roe generally.
How sturgeon caviar differs from other roe
Codex’s food-category description groups salmon roe, cod roe, and lumpfish products among other fish roe products or caviar substitutes. The name “lumpfish caviar” is used for a product, but that does not make it sturgeon caviar under the sturgeon standard. Codex GSFA Online Food Category 09.3.3 describes these as distinct products within the broader fish-roe category.

What to check when comparing fish-egg products
Use the product’s species, salt treatment, and processing or preservation form to understand what you are comparing. Roe may be sold fresh, frozen, cooked, smoked, or pasteurized; these forms are not interchangeable descriptions of the product.
- Species: Check whether the eggs are from sturgeon or another fish.
- Salt treatment: The Codex sturgeon-caviar definition specifically requires treatment with food-grade salt. Its standard specifies finished-product salt content of 3 to 5 grams per 100 grams.
- Processing or preservation: Look for whether the roe is fresh, frozen, cooked, smoked, or pasteurized.
These distinctions help avoid treating a substitute or another kind of roe as the same product as sturgeon caviar.
