de’sendent is a seasonal set-menu restaurant in Margaret River, open for dinner bookings Wednesday to Saturday from 6pm. It opened in January 2024, so it is not a brand-new 2026 opening. The official dining page lists the degustation at A$135 per person and an optional wine pairing at A$99 per person; allow at least two hours for dinner.
What to expect at de’sendent
de’sendent describes its food as a seasonal expression of Western Australia’s South West, shaped by local farmers, fishermen and artisans. The restaurant says it offers a single degustation menu that changes with the seasons and ingredient availability. That means the current courses—and whether a particular ingredient appears—cannot be inferred from examples elsewhere.

The Margaret River regional tourism listing names abalone, Wagyu beef, marron and uni (sea urchin) as examples of premium Western Australian ingredients, not guaranteed dishes. The restaurant’s story explains that it no longer grows everything itself, while continuing the sourcing and produce philosophy associated with the owners’ Arimia Estate venture. Evan Hayter leads the kitchen. The restaurant identifies Ann Spencer as owner and Joshua Down as restaurant manager and drinks-program designer.
The venue describes an open kitchen and says chefs may bring dishes to the table when possible. Its characterization of the experience as personal and relaxed is the restaurant’s own description, not an independent review. The tourism listing calls it a 35-seat restaurant; Tourism WA’s 2026 media kit describes capacity for 35 indoor diners plus alfresco options.

The restaurant’s current official dining page describes one seasonal degustation, rather than an à la carte dinner. A Broadsheet listing updated in 2025 mentions à la carte, but that older directory description conflicts with the current official menu information.
How to book and plan your visit
- Choose a Wednesday-to-Saturday dinner date and check the restaurant’s live reservations calendar for availability and the current booking options: de’sendent reservations.
- Review the menu format, published prices and meal timing on the official dining page before confirming.
- Contact the restaurant before booking if anyone in your party has dietary requirements. The restaurant asks guests to email in advance because its ability to accommodate requests is very limited.
- Arrange a driver transfer when making the dinner reservation. The restaurant says local partner drivers need advance notice; it does not publish provider names, prices or availability.

Dietary requirements and transport
Dietary needs
de’sendent says requirements are extremely limited and requests that guests email before booking. It may consider advance requests where possible, but says it cannot cater for lacto ovo (fodmap), paleo, or combinations of multiple requests. If a dietary need is essential, get confirmation directly from the restaurant before making a reservation rather than assuming it can be accommodated.

Getting to and from dinner
The restaurant strongly advises arranging a driver transfer when booking dinner, and says local partner drivers require advance notice. Its reservations guidance does not establish current provider names, fares or availability, so ask the restaurant or a prospective provider directly when planning transport.

The restaurant’s news archive says it received three stars and New Restaurant of the Year in the 2025 West Australian Good Food Guide Awards. Its homepage advertises “WA Restaurant of the Year 2026,” but does not identify the awarding body in that wording. Treat that as the restaurant’s own award claim unless you verify the source and category independently. The regional tourism listing says de’sendent opened in January 2024 and presents it as the next chapter after the owners’ Arimia Estate venture.
