Big Don’s Smoked Meats and New State Brewing were reported in August 2022 to be planning a barbecue shop and taproom in Ashfield, Bayswater, Perth. The reports described a Texas-style, wood-fired barbecue concept paired with a rotating New State beer range. They do not establish whether the venue opened or is operating now.
What was planned for Bayswater?
The proposed venue brought together Big Don’s Smoked Meats, the barbecue business associated with Donovan Macdonald, and New State Brewing, a joint venture involving Macdonald and brewer Joel Nash. So Perth described a warehouse venue; Broadsheet reported two neighbouring warehouses in the Ashfield industrial area of Bayswater. So Perth reported the plan on 24 August 2022, while Broadsheet covered it on 10 August and updated its report on 16 August 2022.
The concept combined a casual barbecue shop with a taproom and outdoor seating. These were descriptions of the proposed layout, not confirmation of a completed venue or present-day facilities.
What food and beer did the reports describe?
Texas-style barbecue
The planned food was described as Texas-style, wood-fired barbecue focused on beef, dry-rub seasoning, and slow cooking. Broadsheet said meat would be sliced to order after coming out of the smokers. It also reported plans for additional house-made salsas and fermented sauces, with corn tortillas alongside flour tortillas. Those details describe the intended menu in 2022, not a verified current menu.

New State beer
New State was expected to brew a rotating range rather than concentrate on a fixed set of core beers. Broadsheet also reported plans for direct-to-customer sales and subscriptions. Current releases, sales arrangements, subscriptions, and delivery availability are not established by the reports.
What was distinctive about the equipment and venue plans?
Both reports mentioned four offset barbecue smokers imported from Texas. Broadsheet specified a capacity of 4,000 litres for each smoker. That is a reported specification for large commercial equipment planned for the venue, not a consumer smoker recommendation.

Broadsheet described a combined planned capacity of 120 diners: 20 seats in the shop and 100 in the taproom. So Perth said the venue expected to trade two days per week and host ticketed and walk-up events, with a schedule planned for release on Mondays. These were projections and operating plans reported in 2022; they should not be used to plan a visit now.
