Some fish eggs are relatively affordable; others are a luxury purchase. In the seller examples available in 2025 and 2026, trout and salmon roe cost less than sturgeon caviar, but there is no representative market-wide average. To judge a price fairly, compare the species, stated style or grade, package weight, and delivered cost—not just the price on the tin.
What counts as fish eggs, and why do prices differ?
“Fish eggs” is a broad category, not one comparable product. Salmon roe, trout roe, and sturgeon caviar differ in species and product identity, so a lower price for one does not automatically make it a cheaper version of another. Prices also depend on package size, the seller’s stated grade or style, and delivery charges.
The available listings are examples from individual sellers and a supplier catalog, not a market survey. They show a wide spread, but cannot establish a universal price range or prove that the most expensive option is the best quality.
What do seller listings charge?
The examples below retain each seller’s package size and date. The per-gram figures are calculated from the listed package prices; they are arithmetic comparisons, not market benchmarks. Prices can change.

These figures illustrate the gap between particular listings, not a fixed rule for every shop or product. Cavière said its prices were checked in August 2026 and change often; the Seattle Caviar Co. figure is a seller listing observed on October 8, 2026. Neither is an independent benchmark.
How to compare the cost of caviar and roe
- Identify the product. Compare salmon roe with salmon roe, trout roe with trout roe, or sturgeon caviar with sturgeon caviar where possible. If products differ, treat the comparison as a choice between distinct foods, not equivalent grades.
- Normalize the package size. Divide the listed price by net grams or ounces. In the table, the 1 oz packs are converted using approximately 28.35 grams per ounce; the resulting unit prices are rounded.
- Read the seller’s grade or style description. Reported grades and product descriptions may help distinguish listings, but the available sources do not establish a universal grading scale shared by all sellers.
- Calculate the delivered total. Add shipping and any cold-chain or overnight delivery fee before deciding what the purchase costs. Cavière notes that overnight cold shipping can materially affect the total.
- Check product details. Review ingredients, storage directions, and sourcing information where provided. For example, Seattle Caviar Co. identifies its Siberian caviar as Acipenser baerii, lists roe and salt as ingredients, and advises keeping it chilled rather than frozen.
Does a higher price mean better quality?
Not by itself. Price can reflect differences in species, stated grade or style, package size, and shipping, but the available seller examples do not establish that price alone measures quality. Compare the details the seller actually provides and avoid treating a grade label as directly comparable across sellers unless its meaning is clear.
