Its published review supports these three picks—not seven. Which one suits you depends chiefly on whether you want to flatten cutlets, tenderize with a toothed face, or pierce meat with blades.

These are findings attributed to Food Network Kitchen’s review, updated February 5, 2026; they are not independent test results. The 18-second result applies to that review’s specific test—one 3-ounce chicken breast pounded to 1/4-inch thickness—not a guaranteed time for other cuts or kitchens.
What is the difference between a meat pounder and a meat tenderizer?
Mallet-style and short-handle pounders
Both designs can flatten meat and tenderize it. A mallet commonly has a two-sided head, with a flat face for pounding and a toothed face for tenderizing. A short-handle model uses a heavy, double-sided disc or puck. The Norpro pick lets the user orient its disc to choose between its flat and tenderizing faces.
Blade-style tenderizers
A blade tenderizer punctures meat to break down connective tissue. It does not flatten a cutlet, so it is not a substitute for a pounder when uniform thickness is the goal. The OXO bladed model is the pick for this different task.

How Food Network Kitchen tested the picks
Food Network Kitchen says it selected nine tools based on popularity, customer reviews, price, and additional features. The team reviewed manuals and recorded each tool’s size, weight, special features, and dishwasher suitability. In the flattening test, it pounded 3-ounce chicken breasts to 1/4-inch thickness and compared speed, evenness, and ease of use. For tenderizing, it worked with one-inch boneless pork chops, marinated them in an acid-based marinade for three hours, cooked them in a cast-iron pan, and assessed tenderness and marinade penetration. The team then cleaned the tools and checked dishwasher-safe models for damage.
The inspected review names three winners from that nine-tool test. It does not identify four additional winning pounders, so this guide does not present other products as tested picks.

What to consider before buying a meat pounder
- Striking surface: A very small head can leave dents or make pounding ineffective. Rounded edges may be less likely to tear meat, according to Food Network Kitchen’s observations.
- Head weight and leverage: Consider whether the tool’s shape and weight feel manageable for the amount of pounding you expect to do.
- Grip security: A stable handle matters when applying repeated force; for blade tools, a non-slip grip and a way to lock the blades are useful handling features.
- Cleaning: Check whether the tool is dishwasher-safe and whether it comes apart. A tool that disassembles may need that step for thorough cleaning.
- Storage and task: A two-sided pounder offers flattening and toothed tenderizing in one tool. A bladed model is for piercing, not flattening, and its blades call for careful handling and storage.
Food safety when using a blade tenderizer
Needles or blades can carry bacteria from meat’s surface into its interior. USDA Food Safety and Inspection Service guidance, on its page about mechanically tenderized beef last updated March 21, 2022, advises cooking mechanically tenderized beef to an internal temperature of 145°F followed by a three-minute rest, checked with a food thermometer. That specific temperature guidance is for beef; use the appropriate safe-temperature guidance for poultry and other meats rather than applying 145°F to every meat.
