What Makes the Most Money at a Concession Stand?

Popcorn may offer attractive unit economics, and drinks led an older industry survey’s product mix. Find your stand’s real winners by tracking full costs, demand, waste, and service time.

No single concession-stand item is proven to make the most money everywhere. Profit depends on what your audience buys, how much each portion really costs, how quickly you can serve it, and how much goes unsold. Popcorn is a plausible high-margin candidate, while an older industry survey found carbonated drinks made up the largest share of operators’ product mix—but neither fact is a universal profit ranking. The reliable answer comes from tracking your own sales and costs across comparable events.

Sales share, margin, and profit are different measures

An item can account for many sales without producing the most profit. Product-mix share tells you how much of a surveyed group’s sales came from a category; it does not reveal the category’s costs or net contribution. Gross margin describes what remains after the item’s direct cost, while total contribution also depends on how many portions sell and the other costs of running the stand.

The National Association of Concessionaires summarized a survey conducted in early 2014 with Florida International University. Respondents represented 47% of NAC operator members. In that historical sample, carbonated beverages accounted for almost 29% of product mix, followed by popcorn at 15%, sandwiches at 11%, pizza and hot dogs at 8.5% each, candy at 6%, nachos at 4.3%, and healthier options at 4%. The same summary reported surveyed per-capita spending of $7.31, more than 212 million annual guests, $1.5 billion in annual revenue for the surveyed companies, and direct labor equal to 22% of revenue. Those figures describe the survey’s respondents and period, not a current forecast for a school fundraiser or a small event.

Why popcorn is worth testing—but not guaranteed to win

Popcorn can be attractive because the ingredient cost per portion may be low and it can be prepared in batches. Gold Medal Products Co., an equipment vendor, said in 2022 that most concession food costs were under $1 per serving and estimated that popcorn sold for $2 could yield a margin of 70% or higher. That is vendor guidance, not an audited cost model or a result every operator should expect. Your actual cost depends on portion size, ingredients, bags, toppings, waste, and other expenses. Equipment also changes the calculation. A popper and dispenser require space, power, cleaning, and an initial equipment outlay; the right setup depends on expected volume and the venue. Treat a commercial popcorn machine as an equipment category to evaluate, not an automatic purchase. Gold Medal’s advice favors a simple menu and names popcorn, nachos, hot dogs, and pretzels as established candidates, but that is vendor-published guidance rather than an independent comparison of profits.

Calculate what each sale actually contributes

Start with the complete cost of one sellable portion. Include the food, packaging, condiments, and other supplies needed to hand it to a customer. Then account separately for waste, payment costs, labor, inventory risk, and how much service time the item consumes.

Keep markup and gross margin distinct. If an item costs $1 and sells for $2, the markup is 100% of cost, but gross margin is 50% of the selling price before other costs. A high margin percentage can still produce little total profit if few portions sell; a lower-margin item can contribute more dollars if demand is strong and service is efficient. Use a consistent event scorecard

For comparable events, record the same information for each menu item:

  • Units sold and revenue.
  • Actual cost per portion, including packaging and condiments.
  • Waste, complimentary portions, and remaining inventory.
  • Preparation and service demands, including whether the item slows the line.
  • Event context, such as audience, attendance, schedule, and weather.

Use those records to compare contribution dollars per serving and, where speed matters, contribution dollars per minute of counter time. This reveals whether an item’s apparent margin survives real operating conditions.

Choose a menu that fits the event and the stand

Hot dogs, nachos, pretzels, packaged snacks, and beverages are reasonable options to test, but none has a dependable universal margin. Match the menu to what your audience wants and what you can store, portion, prepare, and serve reliably. Consider equipment, power, counter space, staff training, shelf life, leftover risk, and whether products work well together—for example, as a practical snack-and-drink bundle.

A bigger menu is not automatically more profitable. More choices can mean more inventory, preparation, and potential waste. Gold Medal recommends keeping school-stand menus simple; Plymouth Popcorn & Concessions similarly advises starting small and watching demand and waste. Large venues do offer a wider assortment: the current official Great American Ball Park menu lists items including hot dogs, bottled drinks, candy, chips, nachos, popcorn, pretzels, and cotton candy. That demonstrates variety at one major venue; it is neither a profit ranking nor a template for a small fundraiser. Great American Ball Park concessions menu.

Healthier choices can affect total sales, not just item margins

In a pilot study of high-school football concession stands, researchers reported adjusted average revenue per varsity game of $6,599 in 2008 and $6,849 in 2009 after accounting for candy and soda price increases; the difference was not statistically significant (P=0.88). The study also reported increased average sales after healthier options were introduced, even though those items had lower average margins. These results are specific to the study’s setting and years, not a forecast for another stand. 2015 high-school concession makeover pilot study.

If affordability or healthier choices are part of your stand’s mission, evaluate them alongside financial contribution. A lower-margin option may help serve customers or support the event’s goals; the relevant question is how the overall menu performs, not whether every item has the highest margin.

A practical way to find your own top earner

  1. Pick a short test menu. Choose a few items that fit your audience, storage, equipment, and staffing. Include candidates such as popcorn, a hot food, a packaged snack, and a drink only if the stand can handle them.
  2. Set prices from full portion costs. Calculate the cost of the complete serving, then choose prices that work for your customers and cover operating needs. Check applicable local requirements; tax, food-safety, permit, and payment rules vary by venue and jurisdiction.
  3. Track comparable events. Record units, revenue, actual costs, waste, complimentary items, remaining stock, and service constraints using the same method each time.
  4. Compare total contribution and throughput. Look beyond margin percentage. Identify which items generate the most contribution in the time and space available, and whether they slow service or create leftovers.
  5. Adjust one thing at a time. Use the results to change portions, prices, quantities, or the menu, then compare with similar events. This helps distinguish a real improvement from differences in attendance or event conditions.

No current nationally representative ranking of net profit by concession item and venue type is established here. Your stand’s event records and actual supplier costs are a stronger basis for a decision than an old product-mix share or a vendor’s margin estimate.
