In documented cases, thieves steal used cooking oil because it can be diverted into an illicit resale chain. A French Gendarmerie investigation traced stolen restaurant and institutional frying oil across borders, alongside thefts of the specialist containers used to collect it. That establishes a commercial motive in this case—not a universal explanation for every oil theft.
Why used cooking oil has value to thieves
Once restaurants discard frying oil, it can still have commercial value as a recoverable material. The French Gendarmerie described stolen used oil being moved through an illicit trafficking chain, making collection points potential targets. The report documents diversion for resale; it does not establish the destination or motive in every theft.
This distinction matters: the documented cases concern used oil awaiting collection, not necessarily new bottles of cooking oil taken from shops. The targets included collection points at fast-food businesses and public institutions. Thieves also stole specialist containers belonging to legitimate collection businesses, disrupting the normal collection and recycling route.
What one cross-border investigation found
In a 2023 account, the French Gendarmerie nationale described an investigation involving 14 transports over a little more than two months. Those transports moved 385 tonnes of used oil toward the Netherlands via Belgium, and investigators assessed the loss at €460,000. How often do police report cooking-oil theft?
Some police disclosures provide local counts, but they are not a reliable measure of the full prevalence of the crime. Cooking-oil theft may not have its own offence category. For example, West Mercia Police said it identified relevant reports by searching incident summaries for keywords and manually reviewing the results. Its figures should be read as reports found through that method, not as a complete count of all thefts.

Do not add these figures together or compare them as if they were measured on the same basis. The forces cover different places and periods, and the searches and recording practices differ. What restaurant operators can take from the cases
The documented theft of collection containers means that site security can include the oil-storage point—not only the building or cash-handling areas. Operators can discuss container placement and security with their collection provider, and check that any proposed lock or other equipment is compatible with the provider’s collection arrangements. The Gendarmerie report establishes container theft, but does not endorse a particular product or security method.
