Canned Tomatoes Chefs Recommend—and How to Choose the Right Can

There’s no single canned tomato chefs agree is best. Their recommendations vary by dish, and the right can depends on format, texture, and label claims.

There isn’t one canned tomato that every chef agrees is the only one worth buying. Chefs recommend different brands for different dishes: Bianco DiNapoli is a favorite for pizza sauce, while Cento San Marzano Peeled Tomatoes and Mutti are among the picks for sauces and other cooking. Choose by the recipe, texture, and label—not by a supposed universal ranking.

Which canned tomatoes do chefs recommend?

These are individual chef recommendations, not the results of a blind taste test comparing every brand under identical conditions.

Cento San Marzano Peeled Tomatoes Glenn Rolnick and Sarah Gavigan recommend it. Gavigan says she roasts canned tomatoes to concentrate their flavor. This is an attributed preference, not proof it beats every alternative.
Mutti Michael White and Glenn Rolnick recommend Mutti. Other chefs cite it for sauces, soups, and reductions. Mutti sells multiple formats. Check that you are buying whole peeled tomatoes if that is what your recipe calls for.
La Valle Michael White praises its D.O.P. product, and chefs in The Kitchn roundup recommend La Valle tomatoes. Check the specific product and label before relying on a D.O.P. claim.
Nina, Fontanella, Muir Glen, and others Chefs in The Kitchn roundup recommend these for particular sauce, braising, soup, and Tex-Mex uses. These are individual preferences, not a shared ranking.

Rolnick describes Cento San Marzano Peeled Tomatoes as “always available and always on point, naturally sweet and tender every time I cook with them.” McNorton’s recommendation is specifically for restaurant pizza sauce, not every tomato dish.

How should you choose a can for your recipe?

Start with the format and texture

Whole peeled tomatoes are a flexible option: crush them by hand or with a tool to get the texture you want. Food Network describes them as useful in sauces, soups, chili, and curries. If you want tomatoes to break down into a smooth sauce, check the ingredient list: some whole peeled tomatoes contain calcium chloride, which helps them hold their shape.

Read origin and certification claims carefully

“San Marzano” and D.O.P. are not interchangeable. Food Network explains that D.O.P. signals protected origin and regulated production. Check the label and origin rather than relying on a brand name or front-label wording alone. A chef’s preference for a San Marzano product does not mean every can using similar phrasing has protected origin.

Match the pick to the dish

For pizza sauce, McNorton specifically names Bianco DiNapoli. For sauce, Rolnick recommends Cento and Mutti. The wider chef roundup includes recommendations for other cooking uses, so consider the stated dish, desired texture, ingredient list, and what is available locally rather than treating the brands as interchangeable winners.

What does “worth buying” mean here?

Chef recommendations can help narrow a grocery choice, but they are not a standardized comparison of flavor, price, or performance. The available accounts don’t establish a single best brand or a numerical ranking. Lidia Bastianich’s preference for San Marzano tomatoes, as reported by The Takeout, rests on their thin skin, pulp, and lower juice and seed content; that is her stated preference, not a guarantee about every can labeled with a similar phrase.

For a practical purchase, choose the format that suits the recipe, verify any origin or certification claim on the specific can, and compare the ingredient list. A recommendation is most useful when it names both the product and the dish it is meant for.
