How to store eggs safely and tell when they have gone bad

Keep shell eggs at 40°F (4.4°C) or below, in their original carton on an interior refrigerator shelf. For best quality, the U.S. Food and Drug Administration (FDA) says to use refrigerated shell eggs within three weeks. Hard-cooked eggs keep for one week, and refrigerated cooked egg dishes keep for three to four days. A sell-by, expiration, or best-if-used-by date is mainly a quality and inventory guide—not an automatic safety cutoff. Safety depends on continuous refrigeration, time at room temperature, shell condition, and whether the egg shows spoilage.

When an egg is questionable, crack it into a separate bowl. Discard it if the shell is cracked, there is visible mold, or it has an unmistakably off odor, flavor, or texture. Those checks cannot guarantee safety, however: food can cause illness even when it looks and smells normal. The float test can suggest that an egg is old, but it does not prove that the egg is safe to eat.

The storage rules that matter most

Egg safety is primarily a time-and-temperature problem. Refrigerate shell eggs promptly at a refrigerator temperature of 40°F (4.4°C) or below. Keep them in the carton they came in and place that carton on an interior shelf or another consistently cold area. The refrigerator door is a poor location because it warms and cools each time the door opens.

FDA guidance says to “Store promptly in a clean refrigerator at a temperature of 40° F or below.” USDA Food Safety and Inspection Service (USDA FSIS) gives the same practical instruction: “Take eggs straight home and store them immediately in the refrigerator set at 40 degree F or below.” Put eggs away as soon as you return from shopping rather than leaving them on the counter while you unpack.

A quick decision table

Egg or dish Recommended limit What the limit means
Raw shell eggs, continuously refrigerated Use within three weeks for best quality FDA quality guidance; safety also depends on handling and spoilage signs
Hard-cooked eggs Use within one week Keep refrigerated after cooking
Cooked egg dishes and leftovers Use within three to four days Refrigerate promptly and keep cold
Refrigerated eggs left at room temperature No more than two hours Reduce the limit to one hour when the ambient temperature is above 90°F

These windows are not interchangeable. A raw shell egg, a hard-cooked egg, and a leftover frittata have different handling histories and different recommended limits.

How to store shell eggs step by step

  1. Check the shells when you buy them. Choose clean, uncracked eggs. A crack gives bacteria a route through the shell, so discard an egg that is cracked rather than trying to tape or cook around the damage.
  2. Go directly home. USDA FSIS advises taking eggs straight home and refrigerating them immediately. If eggs have been kept cold at the store, avoid a long stop in a warm car.
  3. Keep the original carton. The carton protects the shells from knocks, limits moisture loss, and keeps the identifying dates and pack information with the eggs. Do not transfer them to a door tray that has no date information.
  4. Use an interior shelf. Store the carton toward the back or on another stable shelf rather than in the door. Door temperatures fluctuate more than temperatures on an interior shelf.
  5. Verify the temperature. Use a refrigerator thermometer and adjust the appliance so the egg-storage area stays at 40°F (4.4°C) or below. A dial setting alone does not tell you the actual temperature.
  6. Do not wash eggs at home. USDA guidance cautions that home washing can increase contamination risk. If a shell is visibly dirty or damaged, the safer choice is to discard the egg.
  7. Track opened packages and cooked food. Mark the date you hard-cook eggs or prepare an egg dish. Refrigerate cooked food promptly and use it within its applicable window instead of relying on memory.

How long eggs last in the refrigerator

Raw shell eggs

FDA guidance gives refrigerated shell eggs a three-week best-quality period. That is a quality recommendation, not a promise that every egg is unsafe on day 22 or safe on day 21. An egg that stayed continuously at 40°F or below, has an intact shell, and has no spoilage signs may still be usable after the best-quality period, but each additional day makes the handling history and inspection more important. If you cannot establish that the egg stayed cold, discard it.

Hard-cooked eggs

Use hard-cooked eggs within one week, counting from cooking, and keep them refrigerated. Once cooked, eggs should not be treated like raw shell eggs with a fresh three-week window. Store them covered so they do not pick up odors or contaminate other food.

Cooked egg dishes

Refrigerate casseroles, quiche, scrambled eggs, omelets, and other cooked egg dishes and use them within three to four days. For a large casserole, divide leftovers into shallow containers so they chill promptly; the important point is rapid refrigeration and a consistently cold refrigerator. Reheat only the portion you plan to eat so the rest does not repeatedly warm and cool.

Eggs that have been frozen

The guidance summarized here addresses refrigerated eggs and does not establish a storage window or safety procedure for freezing shell eggs. Do not infer a freezer time limit from the refrigerator figures.

What carton dates actually tell you

Cartons may show a sell-by, expiration, or best-if-used-by date. USDA explains that these dates generally communicate inventory timing or expected quality. They are not, by themselves, a universal safety cutoff. An egg past its printed date is not automatically dangerous, and an egg before its date is not automatically safe if it was warm, cracked, or mishandled.

Use the printed date together with the egg’s complete storage history. Ask four questions:

  • Was the carton refrigerated continuously at 40°F (4.4°C) or below?
  • Was it left out for more than two hours, or more than one hour in temperatures above 90°F?
  • Are the shells intact and free of mold or other visible spoilage?
  • Does the egg pass a careful sensory check after being cracked into a separate bowl?

USDA-grade cartons also carry a pack date as a three-digit day-of-year code from 001 through 365. When a sell-by date appears with the USDA grade shield, that date may not be more than 30 days from the pack date. The code helps you understand the egg’s age, but it does not replace temperature control or a spoilage check.

How to tell whether an egg has gone bad

Inspect the shell before cracking

Discard eggs with cracks. Also discard an egg with visible mold. Mold is a clear spoilage signal, and a cracked shell can allow bacteria to enter. Do not try to rescue a damaged egg by washing it or removing only the visibly affected spot.

Crack questionable eggs one at a time

When an egg is old or its history is uncertain, crack it into a small, separate bowl before adding it to a recipe. This prevents one spoiled egg from contaminating the other ingredients. If the egg looks or smells wrong, discard it and wash the bowl and utensils before using them again.

Use smell, appearance, and texture only as warning signs

USDA says spoiled food can develop an off odor, flavor, or texture. A strong sulfur-like or otherwise unusual odor after cracking is a reason to discard the egg. Unusual discoloration, a slimy texture, or mold are also discard signals. Do not taste a questionable raw egg to test it.

Sensory inspection has a firm limitation: FDA warns, “You may be surprised to learn that food can make you very sick even when it doesn’t look, smell, or taste spoiled.” A normal-looking egg therefore cannot certify that pathogens are absent. Refrigeration history, shell condition, dates as quality clues, and cautious disposal are more reliable than trying to find a single visual test.

Understand what the float test can and cannot do

As an egg ages, its air cell becomes larger. That change can make an older egg float in water, so the float test may indicate age or declining quality. The FDA and USDA guidance considered here does not endorse any float-test result as proof of safety. A sinking egg can still have been mishandled, while a floating egg may simply be old rather than contaminated.

If you use the test as a quality clue, do not let it override the safety history. A float result never makes it acceptable to eat an egg that was left warm too long, has a cracked shell, shows mold, or smells spoiled.

How long eggs can sit out

Do not leave refrigerated eggs at room temperature for more than two hours. When the ambient temperature is above 90°F, the limit is one hour. This includes time on a kitchen counter, a picnic table, or in a warm vehicle.

A cold egg can sweat when moved into warm air. Moisture on the shell can help bacteria move through it, which is one reason to return eggs to refrigeration promptly. If you are unsure how long eggs were warm, or you know they exceeded the applicable limit, discard them rather than chilling them again and assuming the refrigerator resets the clock.

Common room-temperature situations

Situation Safer action
Eggs were on the counter for 30 minutes in a normal-temperature kitchen Refrigerate them promptly and continue following the storage guidance.
Eggs were out for three hours Discard them; the two-hour limit has been exceeded.
Eggs were out for 90 minutes on a day above 90°F Discard them; the one-hour hot-weather limit has been exceeded.
You do not know how long they were warm Treat the history as uncertain and discard rather than guessing.

Cooking eggs safely

Cook eggs until both the white and yolk are firm. For casseroles and other egg dishes, use a food thermometer and verify a minimum internal temperature of 160°F, the temperature specified by FDA and USDA FSIS guidance. A browned surface does not prove that the center reached a safe temperature.

Thermometer placement matters in thick dishes. Insert the probe into the center or another likely cool spot without touching the pan. If the reading is below 160°F, continue cooking and check again. Refrigerate leftovers promptly after serving and use them within three to four days.

Why cooking is not a substitute for storage

Cooking a mishandled egg is not a guaranteed rescue strategy. The time-temperature history still matters, and a food can be unsafe without obvious spoilage. Start with clean, intact, properly refrigerated eggs; then cook them thoroughly.

What to do in common borderline cases

The egg is past its sell-by date but was kept cold

The date alone is not an automatic safety cutoff. Check the shell, confirm continuous refrigeration at 40°F or below, crack the egg separately, and discard it if there is any spoilage sign or uncertainty. The three-week FDA period describes best quality, so quality may decline even when the printed date has not passed.

The egg is within date but smells bad

Discard it. A printed date cannot override a clear off odor, mold, a cracked shell, or another spoilage signal.

The egg passed the float test but was left in a warm car

Discard it. The float test indicates age at most; it does not erase the room-temperature limit.

One egg in the carton is cracked

Discard the cracked egg. Inspect the remaining shells, keep intact eggs refrigerated, and avoid letting liquid from the damaged egg contact other food.

You cracked an egg directly into a large batter and then noticed an off smell

Stop and discard the batter rather than trying to remove the egg. Cracking questionable eggs separately is the preventive step that avoids this situation.

You cannot remember when cooked eggs were made

If you cannot establish that hard-cooked eggs are within one week or cooked leftovers are within three to four days, discard them. Uncertainty about time is a safety reason not to take the chance.

A practical checklist before eating an egg

  • Temperature: Was it kept at 40°F (4.4°C) or below?
  • Time: Has it stayed within the applicable raw, hard-cooked, or leftover window?
  • Room exposure: Was it ever out for more than two hours, or one hour above 90°F?
  • Shell: Is it clean, intact, and free of mold?
  • Crack test: Did you inspect it in a separate bowl?
  • Cooking: Will the white and yolk be firm, and will egg dishes reach 160°F?
  • Uncertainty: If any answer is unknown and the uncertainty affects safety, discard the egg.

How to reduce waste without taking a food-safety gamble

Good storage protects both your health and your grocery budget. Buy quantities you can use within the three-week best-quality period, keep cartons dated and visible, and plan hard-cooked eggs and leftover dishes around their shorter windows. Store eggs in the coldest stable part of the refrigerator so fewer are discarded because of temperature swings. Use a refrigerator thermometer to identify a cooling problem early, and use a food thermometer for thick egg dishes rather than relying on color alone.

The cheapest egg is not the one that forces you to gamble with a questionable history. When you cannot verify refrigeration, time out of the refrigerator, or shell condition, replacing the eggs costs less than treating a foodborne illness.
